Crafting the Perfect Granola Crust: A Deeper Look

Creating a granola crust that holds its shape beautifully while retaining that coveted warm, toasty granola flavor requires a slightly different approach than traditional loose granola. The secret lies in the type of oats and the binding agents used. Instead of standard rolled oats, I opted for quick-cooking oats for this recipe. After extensive testing, it became clear that the finer texture of quick oats significantly enhances the crust’s ability to hold together firmly. Rolled oats, while delicious, resulted in a less stable, more crumbly crust. If you only have rolled oats on hand, a quick pulse in a food processor or blender a few times will break them down sufficiently to achieve the desired consistency.

Beyond the oats, almond flour and tapioca flour play crucial roles. Almond flour contributes a tender richness and helps achieve a super crispy texture, while tapioca flour provides essential structure, ensuring these breakfast tart crusts remain intact when removed from their pans. This combination guarantees a crust that is both sturdy and delightfully crisp. For flavor, coconut sugar introduces a subtle, unrefined sweetness, beautifully complemented by a pinch of salt to balance the flavors and a touch of warm cinnamon, adding an inviting aromatic depth.

Ingredients for Granola Crust Breakfast Tarts laid out on a table, including oats, nuts, coconut oil, and berries, emphasizing the natural and healthy components.

Coconut oil is my preferred fat for this recipe. It’s incorporated into the dry ingredients in its solid form, much like how you would cut butter into flour for a pie crust or crumble topping. This method ensures that the oil is evenly distributed, creating pockets that crisp up beautifully during baking. Finally, finely chopped pecans and almonds are folded in, adding that essential nutty crunch and depth of flavor that truly elevates the granola experience, making each bite incredibly satisfying.

Effortless Assembly and Versatile Serving Options

Once the granola breakfast tart crusts emerge golden brown and fragrant from the oven, nestled in their cute little tart pans, the most labor-intensive part is complete. From this point, you have several convenient options. You can assemble and serve your tarts immediately for instant gratification, or you can prepare the crusts in advance and store them. These baked granola crusts keep wonderfully in the refrigerator for a few days or in the freezer for longer periods, ready to be transformed into a delicious breakfast whenever you desire.

While these tarts are quick and easy to assemble, for the absolute best texture and freshness, I highly recommend topping them just before serving. However, if you need to get a head start, they can certainly be assembled about a day in advance without compromising too much on quality. The joy of these tarts lies in their simplicity, making them an ideal choice for busy mornings or an elegant addition to any brunch spread.

When you’re ready to indulge, simply take a baked crust and fill it with a generous scoop of your favorite creamy yogurt – Greek yogurt for a protein boost, or a dairy-free coconut yogurt for a vegan option. Then, swirl in a tablespoon of your preferred jam (a homemade blueberry chia jam adds an extra layer of healthy deliciousness!) and crown your creation with an abundance of vibrant, fresh mixed berries. Voila! Your stunning and nutritious breakfast tart is ready to be enjoyed.

These versatile breakfast tarts are perfect for various occasions. Prepare a batch for an impressive brunch gathering with friends and family, or bake the granola crusts ahead of time and keep them in the fridge. This way, you’ll have a quick, healthy, and delicious breakfast ready to assemble on even the most rushed mornings. And for those who appreciate desserts that aren’t overly sweet, these breakfast tarts can easily double as a wholesome and satisfying treat at the end of your day. They are a celebration of simple, natural flavors and textures. Enjoy every delightful bite!

Ingredients

For the granola crust

  • ⅓ cup (32g) almond flour
  • 2 tablespoons (14g) tapioca flour
  • ¾ cup (67g) quick oats
  • ¼ cup coconut sugar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon cinnamon
  • ¼ cup coconut oil, solid
  • ¼ cup sliced almonds
  • ¼ cup finely chopped pecans

For the topping

  • 2 cups Greek yogurt or coconut yogurt (Culina is a good choice for coconut yogurt)
  • ¼ cup jam (homemade blueberry chia jam recommended)
  • 1 cup mixed berries

Instructions

  1. Preheat oven to 325ºF. Prepare four small tart pans by lightly greasing them with coconut oil. Set aside.
  2. In a mixing bowl, combine the almond flour, tapioca flour, oats, coconut sugar, salt, and cinnamon. Add the solid coconut oil and, using a pastry cutter, two forks, or your hands, work the coconut oil into the flour mixture until it resembles a coarse meal with no dry flour visible. Toss in the sliced almonds and finely chopped pecans.
  3. Divide the granola crust mixture evenly among the four prepared tart pans. Use a flat-bottomed measuring cup or glass to firmly press the crust mixture along the bottom and up the sides of each pan, creating an even layer.
  4. Place the tart pans on a baking sheet and bake for 12-15 minutes, or until the crusts are firm to the touch and lightly browned. Allow them to cool completely before removing from the pans.
  5. Immediately before serving, top each cooled tart crust with approximately ½ cup of yogurt. Swirl about 1 tablespoon of jam onto the yogurt, then generously top with ¼ cup of mixed berries. Serve and enjoy!
