This summer has been precisely that for me – an incredible journey filled with new experiences, personal growth, and, of course, plenty of baking adventures. My internship at T-Mobile, which I mentioned in earlier posts, has been nothing short of transformative. Despite a commute that occasionally tests my patience, the learning opportunities and exposure I’ve gained have far exceeded my expectations. My team has been an incredible source of knowledge and support, and I feel like I’m absorbing so much every single day. It’s truly baffling to realize that I’m already halfway through this invaluable experience. Time, it seems, flies even faster when you’re truly engaged and passionate about what you’re doing. The thought of entering my senior year of college next year feels surreal, a testament to how quickly these chapters of life unfold.

Beyond the professional growth, another significant highlight of my summer in Washington has been my living situation. I’m fortunate enough to live with some of my dearest friends, and crucially for my baking endeavors, we have a fantastic kitchen! This isn’t just any kitchen; it boasts ample counter space, excellent natural lighting perfect for food photography, and plenty of room to store all my baking essentials. You truly have no idea how much joy it brings me to have such an accessible and inspiring space to bake in. It has rekindled my passion for creating delicious treats and sharing them with those around me.

Given this newfound baking haven, it’s only natural that I’ve been taking full advantage of it. This past weekend was a whirlwind of flour, sugar, and delightful aromas. I baked up a storm, and out of all the delicious creations, this particular recipe for Mint Cookies & Cream Cupcakes emerged as the absolute favorite, the one most eagerly requested by everyone who tasted them. It’s a testament to the irresistible combination of flavors and textures packed into each delightful bite.

A little tip from my kitchen to yours: while this frosting is incredibly delicious, the delightful Oreo chunks make it a bit challenging to pipe through a standard piping bag. But don’t worry! Ingredients

For the cupcakes

  • 12 Mint Oreos
  • 2 large eggs
  • 1/2 cup (3.5 oz) granulated sugar
  • 1 tablespoon vanilla extract
  • 1 stick unsalted butter, melted and slightly cooled
  • 1 cup (4.25 oz) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk

For the frosting

  • 1 1/2 sticks unsalted butter, room temperature
  • 1 1/4 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 10 Mint Oreos, crushed

For the chocolate ganache

  • 1 cup chocolate chips
  • 1/3 cup heavy cream
  • 6 Mint Oreos, halved

Instructions

  • Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners. Place one whole Mint Oreo in the bottom of each liner.
  • In a large bowl, using a rubber spatula or wooden spoon, gently combine the eggs and granulated sugar until just mixed. Stir in the vanilla extract and the slightly cooled melted butter until smooth.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just incorporated. Be careful not to overmix. Finally, stir in the milk until the batter is smooth.
  • Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full. Bake for 12-14 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool completely on a wire rack before proceeding with frosting.

For the frosting

  • In the bowl of an electric mixer fitted with the paddle attachment, whip the room temperature unsalted butter on medium speed for about 5 minutes, until it becomes pale and creamy. This step is crucial for light, fluffy buttercream.
  • Gradually add the powdered sugar, milk, and vanilla extract. Mix on low speed for 1 minute to prevent a sugar cloud, then increase to medium speed and beat for another 5 minutes until the frosting is light and fluffy.
  • Fold in the crushed Mint Oreos and mix until they are evenly incorporated throughout the frosting, about 1 minute. The frosting will be thick and wonderfully chunky.
  • Once the cupcakes are completely cooled, generously spread the Mint Oreo buttercream over each cupcake using an offset spatula or knife. If desired, garnish with a mini Oreo or an additional half Mint Oreo.

For the chocolate ganache

  • Place the chocolate chips in a medium heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer around the edges (do not bring to a rolling boil).
  • Remove the cream from the heat and immediately pour it over the chocolate chips. Let it sit undisturbed for about 1 minute to allow the chocolate to melt. Then, gently whisk the mixture until it is completely smooth and glossy.
  • Allow the ganache to cool for about 15 minutes, or until it has thickened slightly but is still pourable. Carefully spoon or pour approximately 1 tablespoon of ganache over each frosted cupcake, allowing it to drip attractively down the sides.
  • Before the ganache sets, place a halved Mint Oreo on top of each cupcake for the perfect final touch. Allow the ganache to fully set before serving for the best experience.
