Welcome to a world of homemade delight! These incredible Toasted Coconut Butter Cups are a testament to how simple ingredients can create extraordinary treats. Crafted with just four essential components, the star of this show is undoubtedly the rich, caramelized toasted coconut butter, all enrobed in a luscious dark chocolate shell. More than just a healthy homemade candy, these cups evoke the nostalgic taste of the beloved, now-discontinued Eating Evolved coconut butter cups, offering a delicious and accessible alternative for every sweet tooth.

The Quest for the Perfect Nighttime Treat: A Sweet Story
My evenings often follow a cherished ritual: a warm cup of tea, a square or two of exquisite chocolate, and the comforting embrace of my couch, either lost in a good book or captivated by a favorite show. This routine isn’t just a habit; it’s a mindful way to cap off my day, infusing it with a perfect blend of sweetness and serene relaxation. For what felt like an eternity, my chocolate indulgence of choice was the Eating Evolved Coconut Butter Cups. Their creamy texture and rich flavor were simply unparalleled. However, their premium quality came with a premium price tag – a steep $3 for just two cups. Then, in a truly heartbreaking turn of events in 2023, they were officially discontinued. The thought of losing my beloved treat was, quite frankly, horrifying.
The disappearance of these store-bought wonders sparked a culinary quest. I was determined to recreate that magic in my own kitchen, and thankfully, the journey proved to be incredibly rewarding. Crafting these DIY coconut butter cups at home has not only replicated the joy of the original Evolved Chocolate version but, dare I say, has even surpassed it. The secret lies in the exquisite toasted coconut butter filling. This simple-to-make ingredient elevates the cups with an unbelievably luscious, almost caramel-like flavor that takes them to a whole new level of decadence. It’s a game-changer that makes these homemade treats truly exceptional.

Unlock Deeper Flavor: How to Make Homemade Toasted Coconut Butter
The foundation of these extraordinary coconut butter cups is, naturally, toasted coconut butter. While it might sound gourmet, making it at home is surprisingly straightforward, requiring just one core ingredient: unsweetened shredded coconut. The process is simple yet transformative: you gently toast the coconut until it achieves a beautiful golden hue, intensifying its natural sweetness and depth of flavor. This golden coconut is then blitzed in a high-speed blender until it breaks down into a silky, smooth, and utterly irresistible paste. The subtle caramel notes that develop during toasting are what truly set this butter apart, giving your cups a unique and addictive quality.

Once you master this technique, you’ll discover countless ways to incorporate this versatile ingredient into your cooking and baking. From spreading it on toast to swirling it into oatmeal, it’s a truly delicious addition to many dishes. Just remember, no matter how many other uses you find for it, always save enough to make these incredible cups!
If you’re pressed for time or prefer a more classic coconut flavor, these cups can also be made using regular coconut butter. While the toasted version adds a profound caramel note, untasted coconut butter still delivers a creamy, tropical essence that perfectly complements the dark chocolate. The choice allows for a subtle customization of the final flavor profile, ensuring everyone can enjoy these delightful treats.

Crafting Your Own Decadent Chocolate: A Simple Pleasure
When it comes to homemade candy, the quality of your chocolate makes all the difference. I’ve always been a proponent of using homemade dark chocolate for my homemade candy recipes, and for good reason. It offers unparalleled control over ingredients, allowing you to tailor the sweetness and richness to your exact preference, all while avoiding unwanted additives found in many store-bought options. What many people don’t realize is just how incredibly easy it is to make your own chocolate at home.
Cacao Butter: The Game Changer for Perfect Chocolate
For years, I relied on coconut oil as the fat base for my homemade chocolate, mainly because it was always readily available in my pantry. While effective, I often found myself frustrated by its low melting point, especially on warmer days. My beautiful chocolate creations would quickly become a messy endeavor, losing their firm shape too easily. This time, however, I decided to experiment. I swapped the coconut oil for cacao butter, and the results were nothing short of a revelation – a true GAME CHANGER.
Cacao butter, derived from the cocoa bean, provides a much higher melting point than coconut oil. This seemingly small difference drastically improves the shelf-stability of the chocolate. No more rapid melting or sticky fingers! The cacao butter imparts a much more classic, snappy chocolate texture and a richer, more authentic flavor. It solidifies beautifully, creating a satisfying snap when you bite into the cups, holding its form at room temperature much better than its coconut oil counterpart. This upgrade ensures your homemade coconut butter cups not only taste incredible but also boast the professional texture and resilience of gourmet confections.
Prefer to use store-bought chocolate? No problem! You can absolutely streamline the process by simply substituting 1 cup of your favorite dark chocolate chips. To keep these cups paleo-friendly, opt for a high-quality, refined sugar-free chocolate sweetened with coconut sugar. If you’re following a ketogenic diet, sugar-free chocolate chips are an excellent choice, transforming these into delightful homemade chocolate keto cups without compromising on flavor or texture. This flexibility ensures that these delicious treats can fit various dietary needs and preferences.

Effortless Indulgence: Making and Storing Your Coconut Butter Cups
These homemade toasted coconut butter cups are not just incredibly easy to prepare; they are truly a delight for the senses. The combination of rich dark chocolate and the creamy, caramel-like toasted coconut butter filling creates a harmony of flavors that is simply irresistible. Once assembled, these treats are remarkably resilient and keep beautifully. You can store them in an airtight container in the refrigerator for several weeks, or even extend their life by freezing them indefinitely. The beauty of these cups is their perfect grab-and-go nature, making them an ideal healthy snack or a decadent dessert whenever a craving strikes. In my household, they certainly never last long enough to test the limits of their freezer life – they’re always devoured well before then! I sincerely hope you find as much joy and deliciousness in these homemade cups as I do.

Toasted Coconut Butter Cups

cups
Ingredients
- For the homemade chocolate
- ½ cup 112g cacao butter, recommended, OR coconut oil melted
- ½ cup cocoa powder
- 3-4 tablespoons maple syrup, to taste
- OR you can use 1 cup dark chocolate chips, use sugar free chocolate chips to make this recipe keto
- For the filling
- ¾ cup toasted coconut butter, melted
Instructions
-
Line a muffin tin with 12 liners. Set aside.
-
Begin by melting the cacao butter, if using, by chopping it very finely. Place in a liquid measuring cup and melt in 20-second increments, stirring between each, until fully melted. It can also be melted over a double boiler. Coconut oil can be melted in the microwave in 30 seconds to a minute.
-
In the same liquid measuring cup, whisk together the melted cacao butter or coconut oil, cocoa powder, and 3 tablespoons maple syrup. Taste it, and add more maple syrup if you want it sweeter. You can also add more cocoa powder if you want it darker.
-
If using store-bought chocolate chips, melt them in the microwave or over the stove until fully smooth.
-
Pour a small amount of the chocolate mixture into the bottom of each liner or mold cavity, ensuring the bottom is thinly covered. Do not use more than half of the chocolate mixture for this step. Gently tilt the pan in each direction to allow the chocolate to coat the lower sides of each liner. Place the liners in the refrigerator for about 10 minutes to allow the chocolate to harden.
-
While the chocolate base hardens, melt the coconut butter to a liquid state if it’s not already. This can typically be achieved in about 30 seconds in the microwave; be careful not to overheat or burn it.
-
Once the bottom chocolate layer is firm, spoon about 1 tablespoon of the melted toasted coconut butter over it. Then, pour enough of the remaining chocolate mixture over the coconut butter to completely cover it. (If at any point the remaining chocolate becomes too thick, warm it in the microwave for 10-15 seconds to remelt). Repeat this process for all cups until the filling is fully encased. Return the finished cups to the refrigerator to harden completely.
-
Store the finished Toasted Coconut Butter Cups at cool room temperature or, preferably, in the refrigerator (especially if you opted for coconut oil in your chocolate).
