Indulge in Homemade Chocolate Raspberry Popsicles: A Vegan, Refreshing Treat

These Chocolate Raspberry Popsicles are a refreshing frozen chocolate treat to enjoy on a hot day. These pops, filled with raspberries, are also vegan!

There’s something incredibly nostalgic and comforting about a classic fudgesicle, especially on a sweltering summer day. For many, including myself, they evoke childhood memories of reaching into the freezer for that perfect chocolatey fix. That smooth, creamy texture and just-right sweetness are undeniably satisfying. Even today, I find myself gravitating towards these simple frozen delights, often finding them ready and waiting in my mom’s freezer.

The idea of making homemade fudgesicles always intrigued me. Could it really be as simple as freezing chocolate pudding? This curiosity eventually led me to finally invest in a popsicle mold. While a dedicated mold offers a polished finish, don’t let its absence deter you; simple paper cups and popsicle sticks work just as effectively for creating these delightful frozen treats. The joy of homemade popsicles lies in their simplicity and the endless possibilities for customization.

The Perfect End-of-Summer Indulgence: Chocolate Raspberry Popsicles

These Chocolate Raspberry Popsicles are a refreshing frozen chocolate treat to enjoy on a hot day. These pops, filled with raspberries, are also vegan!

As the vibrant days of summer gradually give way to the crisp embrace of autumn, there’s no better way to savor those last moments of warmth than with a refreshingly cool treat. These Chocolate Raspberry Popsicles are precisely that—a delicious celebration of transitional seasons. The combination of rich chocolate and tart, juicy raspberries creates a flavor profile that is both invigorating and comforting, making them an ideal dessert for any occasion.

The inspiration for this particular flavor pairing struck me while rummaging through my freezer. I discovered a stash of frozen raspberries, remnants from a recent raspberry-picking adventure. It was an instant epiphany! Few combinations, in my culinary opinion, rival the harmonious blend of chocolate and raspberries. Their complementary flavors—the deep, slightly bitter notes of chocolate perfectly balanced by the bright, fruity tang of raspberries—create a symphony on the palate. If you’re as enamored with this pairing as I am, you might also enjoy these other raspberry and chocolate recipes: No-Bake Raspberry Chocolate Tart, Raspberry Chocolate Chunk Bars, and Mocha Raspberry Cake. With this proven track record, it was clear that incorporating frozen raspberries directly into the popsicle molds would add a wonderful burst of fresh, fruity flavor to the creamy chocolate base.

Crafting Your Creamy, Vegan Chocolate Base

One of the most appealing aspects of this recipe is how quickly the luscious chocolate pudding mixture comes together. In just about 5-10 minutes on the stovetop, with a bit of diligent whisking to ensure a silky-smooth consistency free of any clumps, you’ll have your base ready. This speedy preparation makes homemade popsicles a feasible option even on busy days.

Sweetening Smartly with Truvia® Natural Sweetener

For the perfect level of sweetness without the added calories of traditional sugar, I chose Truvia® Baking Blend. As a natural sweetener derived from the stevia leaf, Truvia® offers a zero-calorie alternative that aligns perfectly with a desire for healthier indulgence. Beyond its natural origin and calorie-free nature, I’ve found that Truvia® consistently delivers a superior taste profile compared to other zero-calorie sweeteners I’ve experimented with in the past. It provides a clean, balanced sweetness that allows the rich chocolate and vibrant raspberry flavors to truly shine without any artificial aftertaste.

The Vegan Secret: Full-Fat Coconut Milk

To keep these popsicles deliciously vegan, I opted for full-fat coconut milk. Even if I had whole milk on hand, the choice for coconut milk would still be a strong contender due to its incredible ability to impart a luxurious creaminess that is simply unmatched in dairy-free desserts. The result is a popsicle that’s incredibly smooth and rich, with a delightful mouthfeel that beautifully complements the chocolate and raspberry flavors. These pops strike the ideal balance of sweet, chocolatey, and fruity – never overwhelming in any single aspect. They are, without a doubt, the perfect recipe to cap off your summer gatherings or simply enjoy as a refreshing personal treat. Don’t hesitate to whip up a batch for your next end-of-summer barbecue and share the joy with friends and family!

Tips for Perfect Popsicles Every Time

  • Quality Ingredients Matter: Using good quality dark chocolate and fresh or flash-frozen raspberries will significantly impact the final flavor.
  • Whisking is Key: Don’t skip the constant whisking when making the chocolate mixture. This prevents lumps and ensures a smooth, creamy texture.
  • Cooling Time: Allowing the chocolate mixture to cool slightly before pouring it into the molds helps prevent the raspberries from floating to the top, ensuring an even distribution of fruit throughout the popsicle.
  • Tapping the Molds: After filling, gently tap the popsicle molds on your counter. This helps release any air bubbles and ensures the chocolate mixture settles perfectly around the raspberries and fills every crevice.
  • Don’t Overfill: Leave a small amount of space at the top of each mold to account for expansion during freezing.
  • Easy Removal: If your popsicles are stubborn to remove from their molds, run the bottom of the mold under warm water for a few seconds. They should then slide out easily.

Serving Suggestions and Storage

These Chocolate Raspberry Popsicles are fantastic on their own, but you can elevate the experience even further. Consider a light dusting of cocoa powder or a drizzle of melted vegan chocolate just before serving. For an extra refreshing touch, serve them alongside a glass of sparkling water infused with fresh mint. Store any leftover popsicles in an airtight container or individual freezer bags to prevent freezer burn and maintain their delicious flavor for up to two weeks. However, given how irresistible they are, it’s unlikely they’ll last that long!

Prep Time: 5 mins

Cook Time: 10 mins

Total Time: 15 mins

Servings: 5 popsicles

Ingredients

  • 1 oz. finely chopped dark chocolate
  • ¼ cup Truvia baking blend
  • 1 tablespoon cornstarch
  • 1 tablespoon unsweetened cocoa powder
  • 1¼ cups full-fat coconut milk (or whole milk if not vegan)
  • ¼ teaspoon coarse sea salt
  • ½ teaspoon vanilla extract
  • ½ tablespoon unsalted butter, at room temperature (use vegan margarine to keep vegan)

Instructions

  1. In a heavy-bottomed saucepan over low heat, gently melt the dark chocolate. Stir frequently to prevent burning. Add the Truvia baking blend, cornstarch, and unsweetened cocoa powder, stirring them into the melted chocolate until combined; the mixture will be crumbly. Slowly drizzle in the coconut milk, whisking continuously until all the milk is incorporated and the mixture is smooth.
  2. Increase the heat to medium. Bring the mixture to a gentle boil, whisking frequently, until it thickens to a pudding-like consistency. This process should take approximately 5-10 minutes. Once thickened, remove the saucepan from the heat and whisk in the salt, vanilla extract, and butter (or vegan margarine). Allow the mixture to stand and cool for about 10 minutes before proceeding to fill the popsicle molds.
  3. While the chocolate mixture is cooling, prepare your popsicle molds by placing a few fresh or frozen raspberries into the bottom of each mold. Once the chocolate mixture has slightly cooled, carefully pour it into each popsicle mold, filling them almost to the top. If necessary, gently tap the molds on the counter to ensure the chocolate mixture settles around the raspberries and removes any air pockets.
  4. Insert popsicle sticks into the filled molds. Transfer the molds to the freezer and freeze until the popsicles are completely solid, which typically takes about 3-4 hours, or overnight for best results. Once fully set, carefully remove them from the molds and enjoy your homemade Chocolate Raspberry Popsicles!
