  • 1/2 cup (1 stick) unsalted butter
  • 1 cup dark brown sugar, packed
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 cup butterscotch chips

  • Preheat oven to 350°F (175°C). Line an 8-by-8-inch baking pan with aluminum foil or parchment paper, ensuring an overhang on the sides for easy lifting. Lightly spray the lining with cooking spray; set aside.
  • In a medium saucepan, melt the butter over medium-low to medium heat. The butter will first melt, then begin to bubble and foam. Continue to cook, stirring very frequently, until brown specks start to form at the bottom of the pan and the butter takes on a nutty aroma. This process typically takes 2-4 minutes.
