Ingredients
- 1 cup coconut sugar, or regular granulated sugar (see notes)
- ½ cup coconut oil, melted
- ⅓ cup coconut milk or other dairy-free milk
- 2 teaspoons vanilla extract
- ¾ cup white rice flour
- ⅓ cup coconut flour or another ¾ cup more rice flour
- 2 tablespoons potato starch
- ½ teaspoon baking powder
- ½ teaspoon baking soda
For the Glaze
- 1 tablespoon coconut oil, melted and cooled slightly
- ¼ cup coconut cream, see notes below
- 2-4 tablespoons honey, sweeten to taste (use maple syrup or agave to keep vegan)
- Coconut milk, if needed for consistency
- Toasted coconut, to garnish
Instructions
- In a large bowl, combine the coconut sugar and melted coconut oil. Mix thoroughly until well combined and smooth.
- Add the coconut milk and vanilla extract to the sugar and oil mixture, stirring until all wet ingredients are fully incorporated. In a separate bowl, whisk together the white rice flour, coconut flour, potato starch, baking powder, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough should be moist and fluffy, but not sticky.
- Allow the cookie dough to rest on the counter for a few minutes while you preheat your oven to 350°F (175°C). This brief rest helps the flours hydrate, improving texture.
- Using a tablespoon, scoop rounded portions of dough and place them onto greased or parchment-lined baking sheets, leaving enough space between cookies for slight spreading. Bake for approximately 10 minutes, or until the edges are lightly golden and the centers are set. Transfer cookies to a wire rack and cool completely before applying the glaze.
For the Glaze
- In a small bowl, combine the cooled melted coconut oil and coconut cream. Whisk them together until smooth. Add honey (or maple syrup/agave) to your desired sweetness level, starting with 2 tablespoons and adding more if preferred. If the glaze is too thick, gradually add small amounts of coconut milk, whisking constantly, until you achieve a smooth, pourable consistency. Spoon the glaze over the completely cooled cookies. For an extra touch of flavor and texture, sprinkle with toasted coconut flakes before the glaze sets.
Notes
Coconut Cream: To get coconut cream, place an unopened can of full-fat coconut milk in the refrigerator overnight. Without shaking or stirring, carefully open the can. The thick, creamy part at the top is the coconut cream. Gently scoop out ¼ cup for the glaze.
