  • 2⅓ cups 224g blanched almond flour
  • ¾ cup 96g arrowroot flour
  • ¼ cup coconut sugar
  • teaspoons baking powder
  • ½ teaspoon sea salt
  • ½ teaspoon cinnamon, optional
  • ½ cup 100g coconut oil, firm
  • cup full-fat canned coconut milk, plus a little extra to brush on top of the scones
  • 1 flax egg, see Notes
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips
  • Raw turbinado sugar, to sprinkle on top (optional)

Instructions

 

  • In a food processor or large mixing bowl, combine the blanched almond flour, arrowroot flour, coconut sugar, baking powder, salt, and cinnamon. Pulse or whisk together until well combined.
  • Add in the cold coconut oil. If using a food processor, pulse until the coconut oil is incorporated and only very small chunks remain, resembling coarse meal. If mixing by hand, use a pastry cutter or a fork to work the coconut oil into the dry ingredients until the mixture has a sandy texture with small pieces of fat.
  • In a separate small mixing bowl, whisk together the coconut milk, flax egg, and vanilla extract. Pour this wet mixture into the dry ingredients and stir or pulse gently until just completely combined. Be careful not to overmix. Finally, gently stir in the chocolate chips, distributing them evenly throughout the dough.
  • Prepare a baking sheet by lining it with a sheet of parchment paper and dusting it lightly with arrowroot flour. Transfer the scone dough to the parchment, dust with a bit more arrowroot flour, and press it evenly into a circular shape, approximately 1½” thick and 8” across. Place the entire baking sheet with the dough in the refrigerator for at least 1 hour or up to 24 hours to chill thoroughly. If leaving in the refrigerator for more than a few hours, I highly recommend wrapping the dough in plastic wrap to prevent it from drying out. This chilling step is crucial for flaky scones.
  • When you are ready to bake, preheat your oven to 375°F (190°C). Remove the chilled dough from the refrigerator and cut the circular shape into 8 equal scone wedges using a sharp knife or a bench scraper. Gently separate the scones from each other on the baking sheet, ensuring they are not touching, to allow for even baking. Use a pastry brush to lightly brush the top of each scone with a small amount of extra coconut milk; this helps with browning and creates a lovely crust. If desired, sprinkle with raw turbinado sugar for an extra crunchy, sweet topping. Bake for 25 to 30 minutes, or until the scones are beautifully golden brown and firm to the touch.
