Ingredients

  • 2 lbs. apples, about 6 medium, peeled, cored and cubed; I used a variety of types
  • cups fresh cranberries
  • 1 teaspoon orange zest, from 1 orange
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons coconut sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon tapioca flour

For the crisp topping

  • ½ cup blanched almond flour
  • ¼ cup tapioca flour
  • ¾ cup gluten-free rolled oats
  • ¼ cup coconut sugar
  • 6 tablespoons coconut oil, solid
  • ½ cup pecans, chopped

Instructions

  • Preheat the oven to 350ºF (175°C). Prepare an 9×9” (or similarly sized) baking pan.
  • In a medium-sized mixing bowl, combine the cubed apple slices, fresh cranberries, orange zest, ground cinnamon, nutmeg, coconut sugar, maple syrup, and tapioca flour. Stir all the ingredients thoroughly until the fruit is evenly coated with the spice and sweetener mixture. Pour this vibrant fruit filling into your prepared baking pan and set it aside while you prepare the delicious crisp topping.
  • In a separate bowl, combine the blanched almond flour, tapioca flour, gluten-free rolled oats, and coconut sugar for the topping. Add the solid coconut oil. Using a pastry cutter, two forks, or your fingertips, work the coconut oil into the dry ingredients until the mixture resembles a coarse meal and no dry flour remains. Finally, fold in the chopped pecans, ensuring they are evenly distributed throughout the topping mixture.
  • Evenly spoon the oat topping over the fruit filling in the baking pan. Bake for approximately 45 minutes, or until the topping achieves a beautiful golden-brown color and the fruit filling underneath is visibly bubbling around the edges. If you notice the topping browning too quickly during baking, loosely tent the pan with aluminum foil halfway through to prevent scorching.
  • Allow the crisp to cool slightly before serving warm. This brief cooling period helps the fruit filling set. Store any remaining leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for longer preservation.

Notes

This recipe doubles easily if you’re baking for a larger crowd. If doubling, use a 9×13″ baking pan and add approximately 10 minutes to the baking time, keeping an eye on the topping to prevent over-browning.
