Ingredients

 

For the chocolate cake

  • 3 cups 12.75 oz all-purpose flour
  • 3 cups 1 lb. 5 oz granulated sugar
  • cups 4.5 oz unsweetened Dutch-process cocoa powder
  • 1 tablespoon baking soda
  • teaspoons baking powder
  • teaspoons salt
  • 4 large eggs
  • cups buttermilk
  • cups warm water
  • ½ cup plus 2 tablespoons vegetable oil
  • 2 teaspoons vanilla extract

For the peanut butter cream cheese frosting

  • cups 3 sticks unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 3 cups powdered sugar
  • cup creamy peanut butter
  • 2 teaspoons vanilla extract

For the peanut caramel filling

  • 1 11 oz bag Kraft caramels (unwrapped)
  • ½ cup heavy whipping cream
  • ½ cup dry roasted peanuts, chopped

For the chocolate ganache

  • 8 ounces bittersweet chocolate, chopped
  • cup heavy cream

For the caramel topping and garnish

  • 1 11 oz bag Kraft caramels (unwrapped)
  • cup heavy cream
  • Peanuts & flaky sea salt, to garnish

Instructions

 

For the cake layers

  • Preheat oven to 350ºF (175ºC). Butter three 9-inch round cake pans generously, then dust them with flour, tapping out any excess.
  • In a large mixing bowl, combine the all-purpose flour, granulated sugar, Dutch-process cocoa powder, baking soda, baking powder, and salt. Mix these dry ingredients on low speed until well combined. Gradually add the eggs, buttermilk, 1 1/2 cups warm water, vegetable oil, and vanilla extract. Increase the mixer speed to medium and beat until the batter is smooth and all ingredients are thoroughly incorporated.
  • Divide the batter evenly among the three prepared cake pans. Bake for approximately 35 minutes, or until the cakes are set and a toothpick inserted into the center of each comes out clean. Allow the cakes to cool in their pans on a wire rack for 15 minutes before carefully inverting them onto the racks to cool completely.

For the peanut caramel filling

  • In a small saucepan, combine all the unwrapped Kraft caramels and the heavy whipping cream. Heat the mixture over low-medium heat, stirring frequently, until the caramels are completely melted and the mixture achieves a smooth consistency. Transfer this warm caramel to a small bowl or liquid measuring cup and allow it to cool until it is just warm to the touch. Stir in the chopped dry roasted peanuts.

For the peanut butter cream cheese frosting

  • In the bowl of a stand mixer fitted with a paddle attachment (or using a handheld mixer), add the softened unsalted butter and cream cheese. Beat them together on medium speed for about 4 minutes until the mixture is light and fluffy. Add the creamy peanut butter and vanilla extract, then beat until no streaks of ingredients remain. Gradually add the powdered sugar and continue beating for another 3 minutes on medium speed until the frosting is smooth, airy, and thoroughly fluffy.

To assemble your Ultimate Snickers Cake

  • Once your cake layers are completely cooled, use a long, thin knife or a cake leveler to carefully level each cake, ensuring the tops are perfectly flat. Then, using the same knife, slice each cake layer horizontally into two thinner layers. You should now have six thin chocolate cake layers ready for assembly.
  • Transfer approximately 1 cup of the prepared peanut butter cream cheese frosting into a small Ziploc bag or a piping bag. If using a piping bag, fit it with a large round tip; if using a Ziploc, simply cut a 1/2-inch hole in one corner. This will be used to create frosting borders.
  • Place the first cake layer, flat side up, onto your desired serving plate or cake stand. Using the piping bag, pipe a continuous circle of frosting around the very edge of this cake layer, creating a border or dam. Pour about 1/3 heaping cup of the peanut caramel filling into the center of the cake layer, spreading it gently up to the frosting border. Place the next cake layer on top. For this layer, use a knife or an offset spatula to spread an even layer of frosting across the entire surface. Continue layering, alternating between the peanut caramel filling (with a frosting dam) and the smooth frosting filling. You should end up with three layers filled with the delectable peanut caramel and two layers filled with the creamy peanut butter frosting. Once all layers are stacked, generously frost the top and sides of the entire cake with the remaining peanut butter cream cheese frosting. Don’t worry if it’s not perfectly smooth, as much of it will be covered. Place the assembled cake in the refrigerator for at least 30 minutes to allow the frosting to set firmly.
  • After the frosting has set, prepare the rich chocolate ganache. In a microwave-safe bowl, combine the chopped bittersweet chocolate and heavy cream. Microwave on high in 30-second intervals, stirring thoroughly between each interval, until the chocolate is completely melted and the mixture is smooth and glossy.
  • Allow the chocolate ganache to cool slightly for about 3-5 minutes – it should still be pourable but not too hot. Carefully pour the ganache onto the middle of the chilled cake, then gently spread it towards the edges, allowing it to naturally drip down the sides of the cake for a beautiful, rustic effect. Return the cake to the refrigerator for at least 1 1/2 hours (or preferably overnight) to allow the chocolate ganache to set completely and the frosting to firm up.
  • Once the chocolate ganache is fully set, prepare the final caramel topping. Place the unwrapped caramels and the additional ⅔ cup of heavy cream in a clean saucepan. Heat over low-medium heat, stirring frequently, until the caramels are completely melted and the mixture is smooth and slightly thinner than the peanut caramel filling. Transfer this caramel topping to a liquid measuring cup and let it cool for about 10 minutes. Stir it once more, then gently pour it over the top of the cake, allowing it to cascade down the sides over the set chocolate ganache. Garnish the top with extra chopped peanuts and a delicate sprinkling of flaky sea salt, if desired, for enhanced flavor and texture.
  • Place the finished cake back into the refrigerator for at least 30 minutes to allow the caramel topping to set slightly before slicing and serving.
