Indulge in the Ultimate S’mores Oreo Skillet Brownie Experience
There are some flavor combinations that are simply destined for greatness, and s’mores is undoubtedly one of them. The irresistible trio of toasted marshmallow, melted chocolate, and crunchy graham cracker evokes cherished memories of campfires and cozy evenings. Now, imagine taking that classic perfection and elevating it with a modern twist: the S’mores Oreo. When Nabisco introduced these magical cookies, a new world of dessert possibilities opened up, and this S’mores Oreo Skillet Brownie is a testament to that.
Before we dive into the delicious details, one pressing question remains: How did Nabisco miss the golden opportunity to name them “S’moreos”? It’s a marketing marvel that will forever perplex us, but thankfully, the sheer deliciousness of the cookies more than makes up for the oversight. From the moment I first bit into one, I was pleasantly surprised. The outer cookies truly capture the essence of a graham cracker, offering that distinct slightly spiced, subtly sweet flavor. While the filling, like many Oreo varieties, leans towards the sweeter side, it definitely delivers that comforting blend of chocolate and marshmallow notes, making them perfect for snacking and, as it turns out, for baking.

A Deep Dive into S’mores Obsession and Culinary Inspiration
While I’m not typically one to grab a handful of Oreos on a regular day, these S’mores-flavored gems were simply too intriguing to pass up. My love affair with s’mores runs deep and wide, inspiring countless culinary creations over the years. My kitchen has been home to s’mores brownies, decadent s’mores cheesecakes, charming s’mores brownie cups, and perfectly chewy s’mores cookies. The list goes on, but I trust you get the picture: if it involves s’mores, I’m all in.
The inspiration for this particular skillet brownie came shortly after I shared my s’mores cookies recipe. I stumbled upon a brilliant creation by Beth from Beth Cakes – her version of s’mores cookies, but cleverly baked in a skillet! What truly captivated me was her adorable presentation, with perfectly toasted marshmallows arranged around the edges of the giant cookie. The moment I laid eyes on those S’mores Oreos, my mind immediately raced to Beth’s skillet masterpiece. The idea of combining the rustic charm of a skillet dessert with the irresistible flavors of s’mores, enhanced by the new Oreos, was too good to resist.

Why a Skillet Brownie is an Absolute Game-Changer
Choosing a skillet for this s’mores concoction wasn’t just a whimsical decision; it was a strategic culinary move. As a self-proclaimed chocoholic, I knew that a fudgy brownie base was non-negotiable, and the distinct qualities of a cast-iron skillet lend themselves perfectly to achieving brownie nirvana. Skillet brownies are a revelation, offering a rustic charm that transforms a simple dessert into a showstopper. The cast iron provides incredible heat retention and distribution, which is key to developing those coveted crispy, chewy edges while maintaining an intensely gooey, fudgy center. This textural contrast is simply divine, making every bite an adventure. Plus, serving a warm, bubbling brownie directly from the skillet just feels incredibly inviting and communal, perfect for sharing (or not!).
The Irresistible Two-Layer Crust: A Foundation of Flavor
My initial thought was that the S’mores Oreos would make a fantastic brownie crust, and I was absolutely right. The secret to this decadent base lies in combining crushed S’mores Oreos with traditional graham cracker crumbs. This ingenious pairing ensures that the crust isn’t overwhelmingly sweet but rather perfectly balanced. The graham cracker crumbs provide that classic, slightly earthy base, while the crushed S’mores Oreos introduce an extra layer of chocolatey, marshmallowy goodness and a delightful texture. When combined with melted butter and pressed into the skillet, this crust bakes into a firm yet crumbly foundation that holds up beautifully to the rich brownie layer, adding an unexpected depth of flavor and a satisfying crunch that elevates the entire dessert.
Crafting the Ultimate Fudgy Brownie Batter
Perched atop that incredible crust is one of my all-time favorite fudgy brownie recipes. Achieving that perfect fudgy texture is all about the right balance of ingredients and careful technique. We start with good quality dark chocolate and unsalted butter, melted together to create a rich, glossy base. The combination of granulated sugar and light brown sugar not only provides sweetness but also contributes to the brownie’s moistness and chewiness. Room temperature eggs and a hint of vanilla extract are crucial for emulsifying the batter and infusing it with flavor. A touch of salt balances the sweetness, while cocoa powder intensifies the chocolate richness. The real trick to fudginess? Don’t overbeat the batter once the flour is added. Gentle folding with a rubber spatula ensures your brownies remain dense and gooey, rather than cakey. To further enhance the s’mores experience, I fold in plenty of chocolate chips, tiny Mallow Bits for extra marshmallowy pockets, and more lightly crushed S’mores Oreos directly into the batter. This ensures every bite is bursting with flavor and delightful surprises.

The Art of Perfectly Toasted Marshmallows: Blowtorch vs. Broiler
The crowning glory of any s’mores dessert is, of course, the toasted marshmallow topping. I’ve been looking for an excuse to use my kitchen blowtorch, and marshmallows always provide the best opportunity! For optimal results, I like to take large marshmallows and carefully rip them in half, placing them ripped-side up on the warm brownie. This creates a beautifully irregular surface that catches the flame (or heat) perfectly, resulting in those desirable golden-brown peaks and valleys once toasted. If your marshmallows are not sticking well to the brownie, a dab of marshmallow cream can act as a delicious adhesive.
Once your marshmallows are in place, it’s time for the magic. If you have a kitchen blowtorch, now is its moment to shine. Gently wave the flame over the marshmallows until they achieve that characteristic golden-brown hue and slightly crispy exterior. Watch them carefully, as they can burn quickly. If a blowtorch isn’t part of your kitchen arsenal, don’t fret! You can achieve equally delicious results using your oven’s broiler. Simply crank your oven to the broil setting (high) and place the skillet back into the oven on the top rack for about 1 minute. This step requires extreme vigilance – keep your eyes glued to the marshmallows, as they can go from perfectly golden to burnt in a matter of seconds. The goal is puffy, light golden-brown perfection.
Serving Suggestions and Flavor Variations
These S’mores Oreo Skillet Brownies are truly ooey, gooey, and absolutely perfect for digging into while still warm. The melted chocolate, soft brownie, and toasted marshmallows create a symphony of textures and flavors that is simply heavenly. Grab a spoon, and dive right in! If you prefer a more traditional serving, allow the skillet brownie to cool slightly before slicing it into wedges. This makes it easier to handle and share. To take this dessert to the next level, consider serving it with a scoop of vanilla bean ice cream, a drizzle of chocolate sauce, or even some fresh berries for a touch of brightness.
Feeling adventurous? This recipe is incredibly versatile. Experiment with different Oreo flavors, like peanut butter or mint, for a unique twist. You could also add a layer of caramel or a sprinkle of sea salt before baking to enhance the flavor profile. Regardless of how you choose to enjoy it, if you’re a s’mores fanatic like me, or if you’re enjoying all the fun new Oreo flavors making their way onto shelves, you are going to absolutely adore this skillet brownie. It’s a comforting, indulgent treat that promises to bring a smile to everyone’s face. Enjoy every single fudgy, marshmallowy bite!

Ingredients
For the crust
- 4 tablespoons unsalted butter, melted
- ¾ cup graham cracker crumbs
- 10 S’mores Oreos, crushed
For the brownies
- 6 oz. dark chocolate, coarsely chopped (recommended dark chocolate)
- ½ cup (4 oz.) unsalted butter
- ¾ cup (5¼ oz.) granulated sugar
- ¼ cup (2 oz.) light brown sugar
- 2 eggs, room temperature
- 1 teaspoon vanilla extract (recommended vanilla extract)
- ½ teaspoon salt (recommended salt)
- 1 tablespoon cocoa powder (recommended cocoa powder)
- ⅔ cup (2¾ oz.) all-purpose flour
- ¾ cup Mallow Bits
- 10 S’mores Oreos, lightly crushed
- Large marshmallows, to garnish
Instructions
- Preheat oven to 350°F (175°C). Lightly spray a 10-inch cast iron skillet with nonstick cooking spray.
- In a medium bowl, whisk together the flour, salt, and cocoa powder. Set aside.
- In a large, microwave-safe glass bowl, combine the coarsely chopped dark chocolate and unsalted butter. Microwave for 30-second intervals, stirring well after each, until the chocolate and butter are completely melted and smooth. This typically takes 1-2 minutes.
- Once melted, add both granulated sugar and light brown sugar to the chocolate mixture. Whisk until thoroughly combined. The mixture should cool down to roughly room temperature.
- Add the 2 room temperature eggs to the chocolate mixture and whisk just until combined. Stir in the vanilla extract. It’s crucial not to overbeat the batter at this stage, as excessive whisking can lead to a cakey brownie texture instead of a fudgy one.
- Evenly sprinkle the reserved flour mixture over the chocolate mixture. Using a rubber spatula (not a whisk), gently fold the flour mixture into the chocolate until only a few streaks of flour remain visible.
- Carefully fold in the Mallow Bits, chocolate chips, and the lightly crushed S’mores Oreos. Mix just enough to distribute them evenly without overworking the batter.
- Pour the prepared brownie batter over the chilled crust in the skillet and gently spread it out evenly with your spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached. Avoid overbaking, as this will prevent your brownies from being gloriously fudgy.
- Remove the brownies from the oven. Immediately place the half-marshmallows on top of the warm brownie, arranging them in a desired pattern.
- If you have a kitchen torch, carefully brûlée the tops of the marshmallows until they are golden brown and slightly crispy. If you do not have a torch, return the skillet to the oven under the broiler for 1-2 minutes. Keep a very close eye on the marshmallows during this step, as they can toast and burn very quickly. Remove once they reach a light golden-brown color.
- Allow the skillet brownie to cool for at least 15 minutes before serving warm directly from the pan. For easier slicing and sharing, you can let the brownies cool completely, then remove the entire brownie from the pan and cut into wedges or squares like traditional brownies.
