    pitted Medjool dates (ensure they are soft and fresh)



  • 3
    tablespoons
    water

    maple syrup,
    for vegan option, or honey



  • ½
    cup
    coconut flour



  • 1

    (8 ounces) dark chocolate (chips or chopped bar, at least 70% cocoa)



  • Optional: Flaky sea salt and chopped peanuts for topping

Instructions

  • In the bowl of a food processor or a high-speed blender, combine the creamy peanut butter, pitted Medjool dates, water, maple syrup, and coconut flour. Process until all ingredients are thoroughly broken down and fully incorporated. The mixture should form a thick, slightly sticky dough that pulls away from the sides of the processor.
    ¾ cup creamy peanut butter,

    ½ cup coconut flour
  • Scrape down the sides of the food processor as needed to ensure an even blend. Continue to process until the mixture is smooth and consistent, without any large chunks of dates remaining.
  • Prepare a baking tray or a large plate by lining it with parchment paper. This will prevent the bars from sticking and make them easy to transfer once chilled.
  • Using a spoon or your hands, scoop out approximately 3 tablespoons of the peanut butter mixture. Roll it into a smooth ball, then gently flatten and shape it into a neat rectangle or your desired candy bar shape. Place each formed bar onto the prepared parchment-lined tray. Repeat until all the dough is used.
  • Once all the truffle bars are formed, it’s time to prepare the dark chocolate coating. Melt the dark chocolate chips or chopped bar either on the stovetop using a double boiler method (placing a heatproof bowl over a saucepan of simmering water, ensuring the bowl doesn’t touch the water) or in the microwave in 30-second intervals, stirring well after each, until smooth and fully melted. I find using a smaller, deeper bowl for melting the chocolate makes dipping much easier, as the chocolate will be deeper.
    1 cup (8 ounces) dark chocolate
  • Using a fork, carefully dip each truffle bar into the melted chocolate, ensuring it’s fully coated. Lift the bar and gently tap the fork against the edge of the bowl to allow any excess chocolate to drip off, creating a smooth, even coating.
  • Place the chocolate-covered truffle bars back onto the parchment-lined tray. This is the perfect moment to add your favorite toppings! Sprinkle with flaky sea salt for that irresistible sweet-and-salty contrast, or add chopped peanuts for extra crunch, or any other toppings you desire. Once all the truffle bars are coated and topped, place the tray into the freezer for at least 1 hour (or until firm) to allow the chocolate to fully set.
  • Once set, these Dark Chocolate Peanut Butter Truffle Bars can be stored in an airtight container in the refrigerator for up to a week. For longer storage, they freeze beautifully for a couple of months. Simply thaw slightly before enjoying.
