- 8 oz. (1 heaping cup) roasted baru nuts, preferably with the skins removed (see Notes below)
- 2-4 tablespoons coconut oil, peanut butter, or cashew butter (I used peanut butter)
- Salt, to taste

Place the baru nuts in a high-powered blender or food processor (a Vitamix works great). Blend on medium-high speed for a few minutes until the nuts have mostly broken down and started to form a butter. The time required will vary based on your machine’s power. Scrape down the sides of the machine as needed or use the tamper to keep the mixture moving.

Add 2 tablespoons of coconut oil, peanut butter, or cashew butter and blend to combine. This should help thin the mixture and allow it to blend more easily. Taste and add more of the oil or nut butter to achieve your desired consistency and flavor. I typically add about 4 tablespoons of peanut butter. Add salt to taste; if using salted peanut butter, additional salt may not be necessary.

Chocolate Baru Nut Butter Cups

- ½ cup (112g) cacao butter, recommended, OR coconut oil
- ½ cup cacao powder
- 3-4 tablespoons maple syrup, to taste
- ¾ cup baru nut butter (refer to the recipe above in this post)
Instructions

Line a muffin tin with 12 paper liners. Set aside.

Begin by melting the cacao butter, if using. If it’s not already in small bits, chop it finely. Place in a liquid measuring cup and melt in 20-second increments in the microwave, stirring between each, until fully melted. Alternatively, it can be melted over a double boiler. Coconut oil can be melted in the microwave in 30 seconds to a minute.

In the same liquid measuring cup, whisk together the melted cacao butter or coconut oil, cacao powder, and 3 tablespoons of maple syrup. Taste the mixture, and add more maple syrup if you desire a sweeter chocolate. You can also add a bit more cacao powder for a darker, more intense chocolate flavor.

Pour a small amount of the chocolate mixture into the bottom of each liner or mold cavity, just enough to thinly cover the bottom. Do not use more than half of the chocolate mixture for this step. Gently tilt the pan in various directions to allow the chocolate to slightly coat the sides of each liner. Place the muffin tin in the refrigerator for about 10 minutes to allow the chocolate to harden.

Once the bottom layer of chocolate is firm, place approximately 1 tablespoon of the freshly made baru nut butter over the hardened chocolate in each liner. Pour enough of the remaining chocolate mixture over the baru nut butter to completely cover it. (If at any point the remaining chocolate becomes too thick to pour, warm it in the microwave for 10-15 seconds to remelt). Repeat this process until all cups are covered. Return the muffin tin to the refrigerator to harden completely.
