  • 2 cups mixed berries (raspberries, blueberries, & blackberries)
  • 1 package Krusteaz Cinnamon Swirl Crumb Cake & Muffin Mix
  • 1 large egg
  • ½ cup plain Greek yogurt
  • ½ cup water
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a springform pan. For easier release, consider lining the bottom with parchment paper.
  2. Arrange the mixed berries evenly over the bottom of the prepared pan. This will form the beautiful upside-down topping.
  3. In a large bowl, combine the Krusteaz Cinnamon Swirl Crumb Cake Mix (reserving the cinnamon swirl packet), egg, Greek yogurt, water, and lemon zest. Mix until just combined and smooth, being careful not to overmix.
  4. Carefully spoon half of the cake batter over the berries in the pan, spreading it gently to cover the fruit.
  5. Evenly sprinkle the reserved cinnamon swirl packet over the batter layer. This creates the delicious cinnamon crumb center.
  6. Spoon the remaining cake batter over the cinnamon crumb layer, spreading it gently to cover.
  7. Bake for 60-75 minutes, or until a wooden skewer inserted into the center of the cake comes out clean, and the berries are bubbling around the edges.
  8. Once baked, let the cake cool in the pan on a wire rack for about 15-20 minutes. This cooling period is crucial for the fruit topping to set properly.
  9. Place a serving plate upside down over the cake pan. Carefully, and with oven mitts, flip the cake and plate over together. Remove the pan (and parchment paper, if used) to reveal the berry-filled top.
