Ingredients
- ▢ ½ cup coconut oil, melted
- ▢ ½ cup cocoa powder
- ▢ 3-4 tablespoons maple syrup, to taste
- ▢ ½ cup coconut butter, melted
- ▢ ½ cup freeze-dried strawberries, crushed into a powder (reserve a few whole to garnish)
Instructions
- Line a mini muffin tin with small cupcake liners. Alternatively, you can also use a peanut butter cup mold, which works wonderfully.
- In a liquid measuring cup, whisk together the melted coconut oil, cocoa powder, and 3 tablespoons of maple syrup until smooth. Taste the mixture and add more maple syrup if you prefer a sweeter chocolate.
- Pour a small amount of the chocolate mixture into the bottom of each liner or mold cavity, ensuring the bottom is thinly covered. Do not use more than half of the chocolate mixture for this step. Place the filled liners in the refrigerator for about 10 minutes to allow the chocolate to harden.
- While the chocolate layer is hardening, prepare the strawberry filling. Stir together the melted coconut butter and the powdered freeze-dried strawberries until well combined. If the mixture appears too thick, you can add a tablespoon of melted coconut oil to achieve a smoother, thinner consistency.
- Once the bottom layer of chocolate is firm, carefully place about ½ teaspoon of the strawberry coconut butter mixture over the hardened chocolate in each cup. Then, pour enough of the remaining chocolate mixture over the strawberry filling to completely cover it. (If at any point your remaining chocolate becomes too thick, gently warm it in the microwave for 10-15 seconds to remelt). Repeat until all cups are filled and covered.
