  • ¾ cup almond butter, smooth or crunchy
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut butter
  • ¼ cup coconut oil
  • ¾ cup crispy brown rice cereal, plus more to garnish
  • ½ cup 3 oz. dark chocolate

Instructions

 

  • Line a muffin tin with 12 muffin liners. This will make it easy to remove the finished cups. Set the prepared tin aside for now.
  • In either a microwave-safe bowl or a small saucepan, combine the almond butter, maple syrup, coconut butter, and coconut oil. If using the microwave, heat in short 30-second intervals, stirring thoroughly after each interval, until the coconut oil and coconut butter are fully melted and the mixture achieves a completely smooth consistency. If opting for a saucepan, heat the ingredients over medium-low heat, stirring frequently, until they are all melted and well combined. This gentle heat ensures everything blends seamlessly.
  • Once your liquid ingredients are perfectly smooth and integrated, gently stir in the crispy brown rice cereal. Ensure the cereal is evenly coated with the almond butter mixture. Then, divide this mixture equally among the 12 muffin liners. For reference, each liner should be approximately one-third full, creating a substantial base for your cups.
