Each event, while unique, contributed to a wonderfully chaotic period where baking became a constant, but sharing my creations felt like a luxury I rarely afforded myself.
The Red Dress Gala, in particular, was an experience I won’t soon forget. It features a unique dessert auction where tables pool their cash, and the highest bidder gets first pick of the sweets. Being tasked with creating every single dessert meant two full days dedicated solely to baking. There were certainly moments of stress – like when the final batch of cookies unexpectedly spread across the entire baking sheet, threatening to become one giant, shapeless confection! However, despite the occasional challenge, there was an immense sense of satisfaction in bringing so many diverse and delicious treats to life. It was a true test of my culinary skills and my ability to manage multiple recipes simultaneously.

During this intense baking spree, I bravely ventured into uncharted territory, trying out several new recipes. It was a risky move, especially given the high stakes of the event, but I’m thrilled to report that they turned out absolutely fantastic! The positive feedback was overwhelming, and after sharing a sneak peek of just a couple of the desserts on my Instagram account, I received a flood of requests for the recipes. Among the standout hits were some incredible dairy-free, gluten-free chocolate chip cookies that truly stole the show – seriously, you guys, they were next-level amazing. Peanut Butter & Jelly Bars

- ¼ cup unsalted butter, melted
- ½ cup peanut butter
- 1 egg
- ¾ cup light brown sugar
- 1 teaspoon vanilla extract
- 1 cup (4.25 oz) all-purpose flour
- ½ cup fresh strawberries, chopped
- ¼ cup strawberry preserves
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper or foil and grease lightly.
- Melt butter in a large microwaveable bowl. Add peanut butter and brown sugar, then whisk to combine thoroughly. Incorporate the egg and vanilla extract, whisking until well blended. Gently add the flour and stir until just combined, being careful not to over-mix. Fold in the chopped fresh strawberries. Pour the batter evenly into the prepared pan, smoothing the top lightly with a spatula or offset knife.
