Tender Gluten-Free Vegan Maple Pecan Scones with a crunchy crust, sweetened with maple syrup and studded with toasted pecans. Perfect for breakfast or brunch.

Scones have captured my heart, and I find myself in the delicious throes of a full-blown scone obsession! It all started recently with a batch of delightful Chocolate Chip Scones, and since then, my culinary curiosity for these versatile baked goods has been insatiable. My kitchen has become a testing ground for countless flavors and mix-ins, all aimed at creating the perfect, guilt-free scone for continuous snacking throughout the day.

The challenge, of course, was to create scones that cater to specific dietary needs without sacrificing the classic texture and rich taste. Traditional scones are famously made with generous amounts of butter, heavy cream, and eggs – ingredients that are far from gluten-free or vegan-friendly. This meant embarking on a journey of experimentation, reformulating every aspect of the recipe to achieve a truly inclusive treat. The goal was simple: craft an indulgent scone that could be enjoyed by everyone, regardless of their dietary choices, focusing on natural sweetness and wholesome ingredients.

After numerous attempts and careful adjustments, I’ve finally perfected a recipe that delivers on all fronts. You no longer have to endure the trial and error because I’ve done all the hard work for you! The result is a scone that, dare I say, rivals the flaky, buttery goodness of conventional versions. For those who have only encountered dry, crumbly, or bland scones in the past, prepare yourselves for a genuine revelation. These Maple Pecan Scones are a treat designed to redefine your scone experience, offering a perfectly moist crumb and an abundance of flavor that will leave you wanting more.

Understanding the Scone: A Culinary Distinction

Before diving into the recipe for these exquisite Maple Pecan Scones, it’s worth noting an important distinction: these are what we might call Americanized scones. The “OG” scone, originating from Britain, typically presents itself in a smaller, less sweet form, often with a slightly drier, more crumbly texture and usually without any added mix-ins. These classic British scones are the elegant companions to clotted cream and jam, traditionally served at a British High Tea, offering a subtle flavor profile that highlights their simple, wholesome ingredients.

In contrast, our Gluten-Free Vegan Maple Pecan Scones embrace a more generous, substantial character. They are larger, bolder, and more overtly sweet, infused with the rich flavor of maple and studded with crunchy pecans throughout. The texture is designed to be softer and more tender, providing a satisfying bite that makes them a standalone delight. While both styles of scones possess their unique charm and deliciousness, I wanted to clarify this difference. If you’re seeking the traditional, understated British version, this particular recipe offers a different, equally wonderful experience – one that celebrates robust flavors and a comforting, cake-like consistency perfect for modern palates.

Crafting Perfect Maple Pecan Scones: The Science of Gluten-Free & Vegan Baking

The secret to achieving gluten-free and grain-free baked goods that rival their conventional counterparts lies squarely in the selection of the right flours. For this crucial step, I consistently turn to the unparalleled quality of Bob’s Red Mill. In this Maple Pecan Scone recipe, their blanched almond flour and arrowroot flour work in perfect harmony to create an exquisite texture. The almond flour contributes a rich, substantial density and a slight sweetness, while the arrowroot flour (also known as arrowroot starch) imparts a delicate crispness, ensuring the scones are light yet satisfying. This blend is key to preventing the dense, gummy texture often associated with gluten-free baking.

Beyond the flour blend, several other ingredients play pivotal roles. Baking powder acts as our primary leavening agent, creating the tender, fluffy crumb that makes these scones so inviting. To replicate the flaky pockets traditionally achieved by cold butter, we incorporate firm, refined coconut oil. When cut into the dry ingredients, the solid pieces of coconut oil melt and steam during baking, forming those characteristic airy layers and a slightly crumbly, utterly delicious texture. This method is fundamental to achieving a scone that truly lives up to expectations, even without dairy.

Bringing all these elements together into a cohesive, flavorful dough requires the right wet ingredients. Full-fat canned coconut milk provides richness and moisture, while pure maple syrup not only sweetens our scones but also infuses them with that unmistakable, comforting maple flavor. For a reliable vegan binder, we use a flax egg – a simple mixture of ground flaxseed and water that mimics the properties of a chicken egg, holding everything together beautifully. If you’re not strictly vegan, a regular egg can certainly be used as a substitute, maintaining the structural integrity and moisture of the scone. And, of course, no Maple Pecan Scone would be complete without a generous amount of toasted pecans, which are folded into the dough just before shaping, adding a delightful crunch and nutty depth that complements the maple sweetness perfectly. After shaping, a crucial chilling period allows the flavors to meld and the coconut oil to firm up, ensuring optimal flakiness during baking.

PRO TIP: For an extra golden-brown crust and a touch of visual appeal, I highly recommend brushing the tops of the shaped scones with a little extra coconut milk just before they go into the oven. This simple step promotes a beautiful browning effect. For an added sparkle and a satisfyingly crunchy topping, sprinkle some raw turbinado sugar over the coconut milk-brushed dough – the coconut milk helps it adhere wonderfully. When these aromatic scones emerge from the oven, filling your kitchen with an irresistible scent, resist the urge to wait! They are truly best enjoyed warm. While a dollop of vegan butter or a swirl of maple butter would be a divine addition, these Gluten-Free Vegan Maple Pecan Scones are absolutely delicious on their own, needing no embellishment to shine.

Prep Time: 20 mins

Cook Time: 25 mins

Total Time: 45 mins

Servings: 8 scones

Ingredients

  • cups (264g) Bob’s Red Mill blanched almond flour
  • 1 cup (128g) Bob’s Red Mill arrowroot flour
  • teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • ½ cup (100g) refined coconut oil, firm
  • ¼ cup full fat canned coconut milk, plus extra to brush on top of the scones
  • ¼ cup pure maple syrup
  • 1 flax egg, see notes
  • ½ cup chopped pecans, toasted
  • Raw turbinado sugar, to sprinkle on top

Instructions

  1. In a food processor or large mixing bowl, combine the blanched almond flour, arrowroot flour, baking powder, cinnamon, and salt. Pulse or whisk together until well combined.
  2. Add in the firm coconut oil. Pulse briefly in the food processor or use a pastry cutter or fork to work the coconut oil into the dry ingredients. Continue until only small, pea-sized chunks of coconut oil remain, ensuring an even distribution.
  3. In a separate small mixing bowl, whisk together the canned coconut milk, pure maple syrup, and prepared flax egg until smooth. Pour this wet mixture into the dry ingredients and stir or pulse gently until a cohesive dough forms. Finally, fold in the toasted pecans by hand to distribute them evenly throughout the dough.
  4. Prepare a baking sheet by lining it with a sheet of parchment paper and dusting it lightly with arrowroot flour. Transfer the scone dough onto the parchment paper, dust the top of the dough with a little more arrowroot flour, and gently press it into a uniform circle, approximately 1 ½ inches thick and 8 inches in diameter. Place the baking sheet with the dough into the refrigerator for at least 1 hour to chill thoroughly. This step is crucial for optimal texture.
  5. When you are ready to bake, preheat your oven to 375°F (190°C). Remove the chilled dough from the refrigerator and, using a sharp knife or a bench scraper, cut the large circle into 8 equal wedges (like slicing a pizza). Gently separate the scones on the parchment paper, ensuring they are not touching each other to allow for even baking. Using a pastry brush, lightly coat the tops of each scone with a bit of extra coconut milk. If desired, sprinkle a generous amount of raw turbinado sugar over the tops for a beautiful crunch and sparkle. Bake for 25 to 30 minutes, or until the scones are gloriously golden brown and cooked through.
  6. Serve these delightful scones warm for the best experience. They are wonderful on their own, but also pair exquisitely with your favorite jam, or a spread of vegan butter or ghee for a dairy-free option. Any leftover scones can be stored in an airtight container in the refrigerator for up to a week, maintaining their freshness and flavor.

Notes

For the flax egg, simply combine 1 tablespoon of ground flax meal with 3 tablespoons of water in a small bowl. Whisk thoroughly and allow the mixture to sit for about 10 minutes, or until it thickens to a gel-like consistency. If you are not adhering to a vegan diet, a regular chicken egg can be used as a substitute for the flax egg.
