Ingredients
- 3 cups gluten-free rolled oats
- 1 cup pecans
- 1 cup almonds, (we used a combo of sliced and whole almonds)
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- ¼ teaspoon cloves
- ¼ teaspoon nutmeg
- ½ teaspoon kosher salt
- ¼ cup maple syrup
- ¼ cup coconut oil, melted
- 3 tablespoons molasses
- 1 teaspoon vanilla extract
- ¼ cup candied ginger, chopped
Instructions
- Preheat the oven to 300ºF (150ºC) and line a baking sheet (or two, if smaller) with parchment paper.
- In a large bowl, thoroughly mix together the rolled oats, pecans, and almonds.
- In a separate medium bowl, whisk together the maple syrup, melted coconut oil, molasses, vanilla extract, ground ginger, cinnamon, cloves, nutmeg, and kosher salt until well combined.
- Pour the wet ingredients over the dry mixture and stir carefully until all the dry ingredients are evenly coated. Spread the granola mixture into a single, even layer on the prepared baking sheet(s).
- Bake for 45 minutes to 1 hour, rotating the pan every 20 minutes to ensure even baking and prevent burning. The granola should be golden brown and fragrant.
- Remove the baking sheet from the oven and, using the back of a spatula, gently press down on the granola mixture to help encourage cluster formation. Then, crucially, let the granola cool completely without disturbing it. This step is essential for solid clusters to form.
- Once completely cooled, toss in the chopped candied ginger, if using, to distribute it throughout the clusters.
- Store your delicious Gingerbread Granola in an airtight container or bag at room temperature for approximately one month. For extended freshness, it can also be stored in the refrigerator or freezer.
