Ingredients

  • 1 15.5 oz can full-fat coconut milk

  • ½ cup coconut sugar

  • 2 tablespoons coconut butter, you can substitute vegan butter or coconut oil

  • ½ teaspoon vanilla extract

For the bars


  • 1 cup 96g almond flour

  • ½ teaspoon cinnamon

  • ½ teaspoon sea salt

  • 3 tablespoons coconut butter, melted

  • ¾ cup dark chocolate chips

  • ½ cup coarsely chopped walnuts

  • ¼ cup coarsely chopped almonds

  • ½ cup unsweetened flaked coconut

Instructions

For the coconut milk caramel

  • In a heavy saucepan, combine the full-fat coconut milk and coconut sugar. Heat over medium heat, stirring frequently, until the coconut milk begins to boil. Reduce the heat to a gentle simmer and continue to cook, stirring often to prevent the sugar from scorching, until the mixture has reduced by about half. If you notice thicker, caramelized sugar forming on the sides or bottom of the pan, use a whisk to reincorporate it.
  • This reduction process will take approximately 30 minutes, resulting in a consistency similar to a thick sweetened condensed milk or a slightly drippy caramel sauce. Once the desired consistency is reached, remove from heat and stir in 2 tablespoons of coconut butter and the vanilla extract until well combined. You should end up with just over a cup of beautifully caramel-colored, sweetened coconut milk.

For the crust/bars

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, allowing some overhang on the sides for easy removal, and then lightly grease it with coconut oil to prevent sticking.
  • While the caramel is simmering (remember to stir it every few minutes), prepare the crust. In a medium bowl, combine the almond flour, cinnamon, sea salt, and 3 tablespoons of melted coconut butter. Mix until well combined and crumbly. Evenly sprinkle this crust mixture into your prepared baking pan. Using your fingers or a flat spatula, press the mixture down firmly and evenly to form the bottom layer of your bars.
  • Next, evenly sprinkle the dark chocolate chips, coarsely chopped walnuts, chopped almonds, and unsweetened flaked coconut over the crust.
