For the banana bread
- 1 cup mashed ripe bananas, about 3 medium bananas, mine weighed ~250g
- ¼ cup almond milk, or other dairy-free milk of choice
- ⅓ cup coconut sugar
- ¼ cup 64g nut or seed butter of choice, I used cashew butter
- ¼ cup 50g coconut oil, melted
- 2 tablespoons ground flax meal
- 1 teaspoon pure vanilla extract
- 1 cup 120g gluten-free oat flour
- 1 cup 96g blanched almond flour
- 1½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon sea salt
- 1 teaspoon ground cinnamon
For the cinnamon swirl & topping
- ¼ cup coconut sugar
- 1 tablespoon ground cinnamon
- ¼ cup chopped pecans
- 1 tablespoon raw turbinado sugar, optional
Instructions

Preheat oven to 350ºF (175°C). Grease an 8.5” x 4.5″ loaf pan (a 9×5” pan can also be used for a slightly thinner loaf) with coconut oil and/or line it with parchment paper for easy removal.

In a large mixing bowl, place the ripe bananas. Use a potato masher or a fork to mash them thoroughly until mostly smooth with a few small lumps remaining. Add the almond milk, coconut sugar, nut butter, melted coconut oil, ground flax meal, and pure vanilla extract. Stir these wet ingredients vigorously until well combined and smooth.

To the wet ingredients, add the gluten-free oat flour, blanched almond flour, baking soda, baking powder, sea salt, and ground cinnamon. Stir gently with a spoon or spatula until all ingredients are just combined. Be careful not to overmix, as this can lead to a tough loaf.

Pour approximately one-third of the banana bread batter into the prepared loaf pan. Evenly sprinkle one-third of the cinnamon sugar mixture over the top of the batter. Finally, add the rest of the banana bread batter and sprinkle with the last of the cinnamon sugar. If desired, garnish the top with chopped pecans and raw turbinado sugar for extra crunch and sparkle.

Bake for 50 minutes to 1 hour, or until a wooden skewer or knife inserted into the center of the loaf comes out clean. The loaf should also spring back gently when lightly pressed with a fingertip. If the top of your loaf begins to brown too quickly, loosely tent it with aluminum foil after about 45 minutes of baking. If you are using a larger 9×5” pan, check for doneness a bit earlier, around 40 to 45 minutes.

Once baked, remove the loaf from the oven and let it cool in the pan for about 15 minutes. This allows the bread to set and prevents it from breaking when removed. After 15 minutes, carefully lift the loaf out of the pan and transfer it to a wire rack to cool completely before slicing. This ensures the best texture and prevents a gummy interior.
