My journey into the world of baked vegan cheesecakes began with my very first baked vegan cheesecake, and ever since, I’ve been completely captivated. From the autumnal delight of a pumpkin baked vegan cheesecake to seasonal variations, I’m always seeking new ways to celebrate this incredible dessert. Now, as we approach special occasions like Valentine’s Day, I am thrilled to share with you a decadent baked vegan double chocolate cheesecake that is sure to steal the show and win hearts.
While I appreciate the simplicity and refreshing qualities of raw vegan cheesecakes, and have numerous recipes to prove it, there’s a unique magic that happens when a vegan cheesecake is baked. The transformation results in a dessert that is far more akin to its traditional counterpart, offering an experience that truly mimics the “real thing.” This isn’t just about recreating a classic; it’s about perfecting a plant-based version that stands proudly on its own.

Baking a vegan cheesecake unlocks an unparalleled ultra-creamy texture, mirroring the luxurious mouthfeel of a classic cheesecake. This is beautifully complemented by a subtle, delightful tang and a satisfyingly crunchy crust. Unlike their raw counterparts, baked vegan cheesecakes also boast superior stability. They won’t succumb to the warmth of room temperature on a hot day, maintaining their structural integrity and creamy consistency – a significant bonus for entertaining and transport!
Despite their sophisticated results, these cheesecakes are surprisingly approachable to make. They require a little more active time than a raw cheesecake, but they are considerably less fussy than traditional cheesecakes, which often demand delicate water baths and precise temperature control. Forget those complexities – our recipe simplifies the process while still achieving spectacular results. Let’s delve into the star ingredients that bring this extraordinary baked vegan chocolate cheesecake to life.

Crafting Your Vegan Chocolate Cheesecake: A Step-by-Step Guide
The journey to this delectable dessert begins with its foundation: a rich and crunchy crust. This gluten-free delight is crafted from a blend of wholesome ingredients. We start with pecans (though you can easily substitute with your preferred nut for a different flavor profile), combined with fine almond flour, natural coconut sugar for sweetness, a hint of aromatic cacao powder for depth, and a pinch of sea salt to balance the flavors. Everything is bound together with a touch of melted coconut oil. This mixture is then firmly pressed into the pan and baked until it reaches a beautiful, golden crunch, creating the perfect base for our creamy filling.
While your crust is cooling, it’s time to prepare the star of the show: the incredibly smooth and flavorful filling. The secret to its luscious texture lies in properly prepared soaked raw cashews, which, once blended, become unbelievably creamy. To introduce that signature cheesecake tang and add a lovely richness, we incorporate dairy-free coconut yogurt and velvety canned coconut milk. For sweetness, pure maple syrup lends a natural, earthy note that complements the chocolate beautifully. The intense chocolate flavor comes from a generous amount of high-quality bittersweet chocolate, melted to perfection, and additional cacao powder for an even deeper cocoa experience. A splash of fresh lemon juice brightens the flavors and contributes to the classic cheesecake tang, while arrowroot starch acts as a natural thickener, ensuring a perfectly set filling. Finally, vanilla extract and another pinch of sea salt enhance the overall profile, bringing all the elements into harmonious balance.

Once all your filling ingredients are prepared, the magic happens in your blender. You’ll blend everything until it transforms into an incredibly smooth, almost silken mixture. This can take a few minutes, so be patient and scrape down the sides as needed to ensure no lumps remain. The resulting creamy concoction is then carefully poured over your pre-baked and cooled crust. Back into the oven it goes for approximately 40 to 55 minutes, or until the edges are set and the center has a gentle jiggle. This slight jiggle is key – it indicates that the cheesecake is mostly set but still perfectly creamy. A crucial tip for preventing cracks and ensuring a perfectly smooth top is the cooling process: once the baking time is complete, turn off your oven, crack the door open a few inches, and allow the cheesecake to cool gradually inside for about an hour. This slow temperature transition prevents thermal shock, which can often lead to unsightly cracks. After this gentle cooling period, transfer your baked vegan chocolate cheesecake to the refrigerator for at least an hour (or ideally, several hours) to chill completely. This final chilling step is essential for the cheesecake to firm up to its ideal sliceable consistency before you add your chosen garnishes and serve.
Elevating Your Cheesecake: Exquisite Garnish Ideas
Once your exquisite baked vegan chocolate cheesecake is perfectly chilled, it’s time to add the finishing touches that will make it truly spectacular. You have a world of delightful options when it comes to garnishing, each promising to enhance the rich chocolatey goodness. Here are some of my favorite choices to inspire you:
- Fresh Berries: A Burst of Color and Tartness. Berries are a classic complement to chocolate, offering a vibrant contrast in both color and flavor. In the photos, I’ve used luscious raspberries, but don’t hesitate to experiment! Juicy strawberries, sweet blueberries, or tart blackberries would be equally fantastic. A mixed berry medley would also create a stunning visual and flavor experience. For an extra touch, lightly macerate the berries with a spoonful of coconut sugar to bring out their natural juices and sweetness.
- Decadent Chocolate Ganache: For the Ultimate Chocoholic. If you are a true chocolate aficionado, a silky smooth chocolate ganache topping is an absolute must. Drizzle it artfully over the cooled cheesecake or spread an even layer for an intensely rich, glossy finish. This will transform your already delicious chocolate cheesecake into an extraordinary double chocolate dream.
- Light & Fluffy Whipped Coconut Cream: A Perfect Balance. To beautifully offset the richness of the cheesecake, a dollop of homemade whipped coconut cream is an exquisite choice. Its airy texture and subtle sweetness provide a wonderful lightness, creating a harmonious balance with the dense, creamy chocolate.
- A Simple Dusting of Cacao Powder: Elegant & Effortless. For the simplest yet most elegant presentation, a light dusting of high-quality cacao powder across the top of your cheesecake is all you need. This creates a sophisticated, velvety finish that hints at the deep chocolate flavor within, making it a beautiful and effortless option.
The resulting baked vegan chocolate cheesecake is a symphony of flavors and textures: wonderfully creamy, deeply chocolatey, luxuriously rich, with just the right amount of tang, and absolutely delicious. It’s the ideal dessert for any celebration, from birthdays and festive holiday gatherings to romantic Valentine’s Day dinners, or simply whenever a craving for an exceptional cheesecake strikes. Its versatility and crowd-pleasing appeal make it a recipe you’ll return to again and again.

Pin Recipe
Ingredients
For the crust
- 1 cup raw pecans (or any preferred nut)
- 1½ cups (148g) blanched almond flour
- ⅓ cup coconut sugar
- 3 tablespoons cacao powder
- ½ teaspoon sea salt
- ⅓ cup coconut oil, melted
For the filling
- 1½ cups raw cashews, soaked in water for 4 hours to soften, drain and rinse before using
- 1 cup vegan coconut yogurt (plain, thick, and tangy works best)
- ¾ cup canned coconut milk (full-fat)
- ⅓ cup (111g) pure maple syrup
- ¼ cup bittersweet chocolate (about 80%), melted
- 2 tablespoons fresh lemon juice (from one large lemon)
- 3 tablespoons arrowroot starch or tapioca starch
- 3 tablespoons cacao powder
- 1 teaspoon vanilla extract
- ½ teaspoon sea salt
For the raspberry topping (optional)
- 1 cup fresh raspberries
- 2 tablespoons coconut sugar
Instructions
For the crust
- Preheat the oven to 350ºF (175ºC). Lightly grease an 8-inch springform pan with coconut oil and place it on a baking sheet.
- In a food processor or high-powered blender, combine the pecans, almond flour, coconut sugar, cacao powder, and sea salt. Pulse slightly to break up the pecans into a coarse meal. Stream in the melted coconut oil while pulsing again until the mixture is well moistened and sticks together when pressed between your fingertips. Scrape down the sides of the container or use a tamper as necessary to ensure an even blend.
- Press the crust mixture evenly along the bottom and slightly up the sides of the prepared pan. Bake for 15 minutes or until firm to the touch and lightly golden. Let it cool completely while you prepare the filling.
For the cheesecake filling
- Reduce the oven temperature to 325ºF (160ºC).
- In a high-powered blender or a food processor (a Vitamix works wonderfully), combine the soaked and drained cashews, coconut milk, coconut yogurt, maple syrup, melted chocolate, fresh lemon juice, arrowroot starch, cacao powder, vanilla extract, and sea salt. Blend until the mixture is incredibly smooth and creamy, scraping down the sides of the container or using the tamper as necessary. This will take about 3 to 5 minutes of continuous blending to achieve a perfectly silken consistency.
- Taste the mixture and adjust to your preferences (add more maple syrup for extra sweetness, lemon juice for a more pronounced tang, or cacao powder for a deeper chocolate flavor). Pour the filling into the cooled crust and gently tap the pan hard on the counter a few times to release any trapped air bubbles.
- Bake for 40 to 55 minutes, or until the cheesecake is mostly set. The edges should appear firm, but the center should still have a slight, delicate jiggle when lightly shaken. Avoid disturbing the cheesecake for the first 40 minutes of baking.
- When the cheesecake is just shy of being fully set, turn off the oven but leave the cheesecake inside. Prop the oven door open a few inches and allow the cheesecake to cool gradually within the slightly ajar oven. This slow cooling process prevents temperature shock, which can cause cracking. Remove from the oven after about an hour.
- Transfer the cheesecake to the refrigerator and chill for at least 4 hours, or ideally overnight, to allow it to firm up completely before slicing and serving.
For the raspberry topping & to serve
- When you are ready to serve, combine the fresh raspberries and coconut sugar in a small bowl. Gently toss and let the raspberries macerate for about 10 minutes; this will draw out their juices and enhance their flavor. Just before serving, carefully arrange the macerated raspberries on top of the chilled cheesecake. Alternatively, serve with a generous dollop of coconut whipped cream or any other fresh fruit you prefer.
- Store any leftover cheesecake tightly wrapped in the refrigerator for up to 1 week.
