  • 1 (13.5 oz.) can full-fat coconut milk or coconut cream, refrigerated overnight
  • 1-3 tablespoons maple syrup, depending on your tastes
  • 1 teaspoon vanilla extract
  • 2 ripe mangoes

Instructions

For the Crust

  1. Preheat oven to 350ºF (175°C). In a food processor, pulse together almond flour, salt, and shredded coconut until finely ground.
  2. Melt together coconut oil and maple syrup, then add this liquid mixture to the almond flour and coconut. Pulse until coarse crumbs form. The dough should clump together easily when squeezed with your fingers.
