  • cups unsweetened finely shredded coconut (120g), also known as desiccated coconut
  • ½ teaspoon kosher salt
  • ½ cup maple syrup (156g)
  • ¼ cup coconut butter (60g), melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice + zest of one large lemon
  • For the Lemon Glaze:
  • 2 tablespoons coconut butter (30g), melted
  • 1 tablespoon maple syrup (20g), warm, especially if refrigerated
  • 2 tablespoons fresh lemon juice
  • 1-3 tablespoons coconut oil, melted (adjust for desired consistency)
