Ingredients

For the crust


  • cup finely chopped dates, packed, about 9 dates

  • 1 cup pecans, toasted and cooled

  • ¼ teaspoon kosher salt

  • 1 teaspoon cinnamon

For the banana nice cream


  • ¼ cup cashew butter, or whatever nut butter you prefer

  • 4 frozen bananas

  • 1 teaspoon vanilla extract

  • 4 scoops Vital Proteins Grass-fed Collagen

  • 1 tablespoon Vital Proteins Grass-fed Gelatin

  • ¼ cup cold water

  • Up to ¼ cup canned coconut milk, if needed to help blend

For the caramel swirl


  • cup paleo caramel sauce

Instructions

  1. Line an 8×8” square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a food processor or high-powered blender, combine the finely chopped dates, toasted pecans, kosher salt, and cinnamon. Pulse until the pecans are broken down into small bits and the mixture sticks together like a cohesive dough. Be careful not to over-blend, as you want some texture from the pecans.
  3. Press the pecan-date mixture evenly and firmly into the bottom of the lined pan. Use the back of a spoon or your fingers to create a compact, smooth crust. Set aside while preparing the filling.
  4. In a small bowl, combine the gelatin and cold water. Stir them together thoroughly and let the mixture stand for 5-10 minutes to “bloom” (it will thicken).
  5. In a food processor or high-powered blender, combine the cashew butter, frozen bananas, vanilla extract, and Vital Proteins Grass-fed Collagen. Blend until the mixture is completely smooth and creamy, scraping down the sides as needed. If the mixture is too thick to blend, add coconut milk one tablespoon at a time until it reaches a smooth consistency.
  6. Gently heat the bloomed gelatin mixture in the microwave for about 20 seconds, or until it becomes completely liquid. Turn your blender on low speed, and with the motor running, slowly drizzle the melted gelatin into the banana nice cream mixture. Continue blending for another 30 seconds to ensure the gelatin is fully incorporated and the mixture remains smooth.
