Ingredients

  • cup pureed pumpkin (1 15 oz. can)
  • 3 eggs
  • cup almond butter or nut butter of choice (92 grams)
  • 3 tablespoons coconut oil, melted
  • cup coconut sugar
  • cup coconut flour (50 grams)
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¾ teaspoon baking soda
  • ¾ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 6 oz. dark chocolate, chopped (see Notes for recommendation to keep 100% Paleo)

Instructions

  1. Grease one 9″x5″ loaf pan and preheat the oven to 350ºF (175ºC).
  2. In a large bowl or using a stand mixer, combine the pumpkin puree, eggs, melted coconut oil, coconut sugar, vanilla extract, and almond butter. Mix until all ingredients are thoroughly combined and smooth.
  3. To the wet ingredients, add the coconut flour, cinnamon, baking soda, baking powder, and sea salt. Mix well until just combined. Be careful not to overmix. Gently fold in the chopped dark chocolate chunks until evenly distributed throughout the batter.
  4. Pour the prepared batter into the greased loaf pan and spread it evenly with a spatula.
  5. Bake in the preheated oven for approximately 50-60 minutes. Baking time may vary depending on your oven. To check for doneness, insert a toothpick into the center of the loaf; it should come out clean.
