  • 1/4 teaspoon kosher salt
  • 1 1/2 cups peanut butter M&Ms, or another variety of M&Ms, or chocolate chips may be substituted

  1. In the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter, creamy peanut butter, both sugars (light brown and granulated), egg, and vanilla extract. Beat on medium speed until the mixture is beautifully creamed, light, and fluffy, which should take approximately 5 minutes on a stand mixer (or at least 7 minutes if using a hand mixer). Pause to scrape down the sides of the bowl thoroughly. Then, add the dry ingredients: flour, cornstarch, baking soda, and kosher salt. Mix until just combined, being careful not to overmix, which typically takes about 1 minute. Gently fold in the M&Ms by hand to prevent them from breaking.
