Irresistible Gluten-Free & Vegan Pecan Pie Bars: Your New Favorite Holiday Dessert
As the crisp air of autumn settles in and the festive season approaches, the familiar aromas of pumpkin spice and warm apple desserts tend to dominate our kitchens. Yet, amidst this joyous baking frenzy, the classic pecan pie often gets overlooked. While beloved for its rich, nutty flavor, many traditional pecan pies suffer from a common flaw: an overwhelming, cloyingly sweet filling, typically thickened with corn syrup, that overshadows the delicate crunch of the pecans. For many years, this sticky-sweet, jelly-like consistency was my sole association with pecan pie, and frankly, it wasn’t a dessert I gravitated towards.

My Culinary Journey to the Perfect Pecan Pie (and Beyond!)
My genuine love for pecan pie blossomed when I took matters into my own hands and began crafting it from scratch. My mission was to create a version that was perfectly gooey, delightfully crunchy, and rich in natural pecan flavor, without the excessive sweetness of corn syrup. My initial success came with a classic pecan pie recipe that, while not gluten-free or vegan, featured the incredible depth of browned butter and steered clear of corn syrup. It quickly became a staple at my holiday gatherings for several years, proving that a truly delicious pecan pie was indeed possible.
Driven by a desire to cater to diverse dietary needs and personal preferences, I embarked on a journey to create even more inclusive versions. This exploration led to the development of my Paleo Pecan Pie, a lighter, yet equally satisfying, option. Soon after, the irresistible Paleo *Chocolate* Pecan Pie emerged, introducing a luxurious bitterness and added richness from dark chocolate that took the dessert to an entirely new level of decadence. Each recipe was a step closer to perfecting the balance of flavors and textures, all while embracing healthier ingredients.

Introducing the Ultimate Pecan Pie Bars: Effortless Elegance and Unforgettable Flavor
While my previous pecan pie creations are cherished, I believe these Pecan Pie Bars truly surpass them, especially when it comes to ease of preparation. They are, without a doubt, the winner in convenience, and certainly rank among the most delicious pecan desserts I’ve ever made! Say goodbye to the complexities of rolling out traditional pie crusts; these bars feature a wonderfully simple yet utterly delightful shortbread crust that comes together with minimal effort. This makes them an ideal choice for holiday bakers seeking a stress-free dessert, or for anyone desiring a show-stopping treat that’s surprisingly easy to achieve.
The Foundation of Flavor: A Crispy Coconut Flour Shortbread Crust
The secret to these outstanding Pecan Pie Bars lies in their perfectly crispy foundation: a shortbread crust made with wholesome coconut flour. Coconut flour is an exceptional ingredient, known for its high fiber content and unique ability to create that distinct sandy, firm bite so characteristic of traditional shortbread. Furthermore, it naturally makes these bars gluten-free and paleo-friendly, without sacrificing flavor or texture. A critical step in achieving maximum crispiness is pre-baking the crust until it turns a beautiful golden brown and becomes wonderfully firm. This essential preparation prevents the crust from becoming soggy once the luscious pecan topping is added, ensuring that every bite delivers a satisfying crunch that beautifully contrasts with the gooey filling.

Crafting the Irresistible Gooey, Caramel-Like Pecan Filling
The heart of any truly great pecan pie is its filling, and our vegan version is nothing short of extraordinary. We begin by meticulously creating a quick, rich caramel on the stovetop. A harmonious blend of nutrient-rich coconut sugar, pure maple syrup, and decadent coconut oil is gently heated, allowing these natural sweeteners and fats to melt and meld into a smooth, creamy, and deeply flavorful caramel base. The gentle heat is key to helping the coconut sugar dissolve completely, which contributes to the velvety texture of the final product.
Once this golden caramel base is perfected and removed from the heat, we whisk in a carefully prepared slurry. This ingenious mixture combines non-dairy milk with finely ground flax meal, tapioca flour (or arrowroot starch), a generous splash of pure vanilla extract, and a pinch of kosher salt. The flax meal and tapioca flour are crucial plant-based binders, expertly stepping in to create that signature thick, gooey consistency traditionally achieved with eggs in classic pecan pie recipes. This clever substitution ensures our bars remain perfectly vegan while achieving the desired luscious texture without compromise.
Finally, perfectly toasted pecans are folded into this decadent caramel mixture. Toasting the pecans beforehand is a small but incredibly impactful step that significantly enhances their inherent nutty flavor and adds an essential layer of irresistible crunch to the finished bars. This rich, nutty, and exquisitely caramelly concoction is then lovingly poured over the crisp, pre-baked, and completely cooled shortbread crust. A final bake of approximately 30 minutes in the oven transforms the filling into a wonderfully bubbly, beautifully set, and intensely aromatic topping, signaling that these pecan pie bars are ready to be unveiled as a masterpiece of dessert perfection.

The Art of Patience: Cooling, Slicing, and Savoring Your Pecan Pie Bars
After these glorious bars emerge from the oven, golden and fragrant, comes what is arguably the most challenging part of the entire process: the waiting game. It is absolutely paramount to allow these Pecan Pie Bars to cool completely and firm up before attempting to slice them. This critical cooling period can take a minimum of two hours at room temperature, but ideally, they should chill overnight in the refrigerator. Resist the temptation to cut into them prematurely, as a properly chilled bar will hold its shape beautifully, revealing distinct, clean layers of the crispy shortbread crust and the luscious, gooey filling. This patience is truly rewarded with every perfect slice.
Once thoroughly chilled and firm, carefully slice them into 16 perfect squares. My partner, Jesse, and I can enthusiastically confirm their addictive quality – our first batch vanished almost instantly! We’ve discovered the ultimate way to elevate these delightful treats: warmed ever-so-slightly in the microwave for about 30 seconds until the caramel becomes wonderfully soft and gooey, then crowned with a generous scoop of creamy vanilla dairy-free ice cream. The exquisite contrast of the warm, melting caramel against the cold, smooth ice cream is pure bliss, a heavenly combination that will undoubtedly make these Pecan Pie Bars a permanent, cherished fixture in your dessert repertoire.

Why These Pecan Pie Bars Deserve a Spot on Your Holiday Table
From the moment your teeth break through the crisp, subtly sweet coconut flour shortbread crust, past the satisfying crunch of toasted pecan bits, and into the rich, luxurious caramel filling, you will undoubtedly understand why these Pecan Pie Bars are a true culinary triumph. These Pecan Pie Bars are thick and caramelly, with a crispy coconut flour shortbread crust and a gooey pecan pie filling on top. These gluten-free, paleo, and vegan bars will be the star of your dessert spread!
Prep Time: 15 mins
Cook Time: 40 mins
Total Time: 55 mins
Servings: 16 bars
Ingredients
For the shortbread crust
- 1 cup coconut flour
- ¼ teaspoon kosher salt
- 3 tablespoons maple syrup
- ⅓ cup coconut oil, softened to a similar consistency as softened butter
For the filling
- ¾ cup coconut sugar
- ⅓ cup maple syrup
- ⅓ cup coconut oil, melted
- ⅓ cup non-dairy milk
- 2 tablespoons flax meal
- 2 teaspoons arrowroot starch, or tapioca flour
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt
- 1¼ cup pecans, toasted + roughly chopped
Instructions
- Preheat the oven to 350ºF (175°C). Grease an 8×8” square pan with coconut oil (I recommend lining the pan with parchment paper as well if your pan doesn’t have a removable bottom).
- In a medium bowl, combine the maple syrup and softened coconut oil, whisking until fully combined and smooth. Stir in the coconut flour and kosher salt until a uniform, smooth dough is formed.
- Press the dough evenly into the prepared 8×8” pan, creating a firm and level base. Bake for 9-11 minutes, or until the crust is beautifully golden brown and firm to the touch. Remove from the oven and let cool completely on a wire rack while you prepare the filling.
- For the filling, combine the coconut sugar, maple syrup, and melted coconut oil in a small saucepan over medium-low heat. Whisk continuously to ensure the ingredients are thoroughly combined. Bring the mixture to a gentle, low boil and allow it to simmer for about 2-3 minutes, stirring occasionally to prevent sticking. Remove the saucepan from the heat and let the mixture cool slightly for 5-10 minutes.
- While the caramel mixture is cooling, in a separate small bowl, whisk together the non-dairy milk, flax meal, arrowroot starch (or tapioca flour), vanilla extract, and kosher salt until you achieve a smooth, lump-free slurry.
- Add the prepared milk/flax mixture to the slightly cooled sugar mixture in the saucepan. Whisk thoroughly until everything is well combined and the mixture is homogenous. Gently fold in the toasted and roughly chopped pecans.
- Carefully pour the pecan filling mixture evenly over the completely cooled shortbread crust in the prepared pan. Spread it out gently to cover the entire crust.
- Return the pan to the preheated oven and bake for 30 minutes, or until the filling is bubbly around the edges and appears set in the center.
- Remove the pan from the oven and let the Pecan Pie Bars cool completely at room temperature on a wire rack. Once cooled to room temperature, transfer them to the refrigerator for at least 2 hours, or preferably overnight. This chilling time is absolutely crucial for the bars to firm up properly and allow for clean, neat slicing.
- Once firm, slice the chilled bars into 16 even squares. Store any leftover Pecan Pie Bars in an airtight container in the refrigerator for up to 5-7 days. For an extra special treat, warm a bar in the microwave for 15-30 seconds until gooey, and serve with a scoop of dairy-free vanilla ice cream. Enjoy!
