Meet Rachel Conners: Your Teen Baker

Before we dive into the delightful world of baking, let me properly introduce myself. My name is Rachel Conners, and I’m 16 years old – turning 17 in just two weeks! Tomorrow marks the beginning of my senior year at Torrey Pines High School in beautiful San Diego, California. It’s a mix of exciting chaos and anticipation as I look forward to college and the next chapter of my life. While many envy San Diego’s perpetual sunshine, I often find myself yearning for the distinct beauty of changing seasons. It’s just another reason why I’m so excited for college, where new experiences and perhaps even a real autumn await!

My path to becoming a dedicated baker took an interesting turn this past summer. After nine wonderful years as a cheerleader, I decided to hang up my pom-poms. It was a big decision, but one I made to truly focus on what I love and want to pursue – and that, as you might guess, is baking! My passion for creating sweet treats is, well, pretty intense. My kitchen is a perpetual hub of delicious aromas and freshly baked goods. Right now, you’d find a golden-brown cornbread, made with plenty of butter and sweet fresh corn (the only way to truly enjoy it, in my opinion), alongside a pan of heavenly “brookies” – that perfect cookie-brownie hybrid, generously glazed with chocolate ganache. And let’s not forget the plate of chocolate and peanut butter cookies (oh, the yum!), a few rich Coconut Brigadeiros, and some leftover healthy muffins I whipped up for my sister’s work. Of course, the stars of today’s show, my S’mores Cookie Cups, are also proudly displayed.

Ingredients

  • 1 1/2 sticks softened butter (3/4 cup)
  • 1 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 1/4 cups unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 2 full graham crackers, broken into pieces
  • 1 cup mini-marshmallows

Instructions

  1. Preheat your oven to 350 degrees F (175 C). Thoroughly grease a mini-muffin pan; this is crucial for preventing the cookie cups from sticking and ensuring they pop out easily after baking.

  2. In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt. Sifting helps to combine the dry ingredients evenly and prevents lumps, contributing to a smooth batter. Set this mixture aside. In a separate, larger bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light, fluffy, and pale in color. This aeration step is essential for a tender, chewy cookie. Remember to scrape down the sides of the bowl periodically to ensure all ingredients are fully incorporated. Slowly beat in the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract until just combined. Gradually add the dry ingredients to the wet mixture, along with the chocolate chips, and mix until just combined. Be careful not to overmix, as this can result in tough cookies.

  3. Carefully spoon the cookie dough into each mini-muffin tin, filling them about three-quarters of the way. The exact amount may vary depending on the size of your muffin tin. Next, take your broken graham cracker pieces and gently press one piece into the center of each dough-filled cup. Finally, place 3 or 4 mini marshmallows on top of the cookie dough in each cup. Bake for 11-15 minutes, or until the edges are set and the marshmallows are lightly golden and puffed. Allow the cookie cups to cool in the pan for about 5 minutes; this helps them firm up and prevents breakage. After 5 minutes, transfer them to a wire rack to cool completely. While they are tempting warm, they fully set and become easier to handle once cooled.
