Homemade Chubby Hubby Fudge with layers of vanilla malt and chocolate, peanut butter swirl, and chocolate covered pretzels.

Few names evoke such widespread joy and deliciousness as Ben & Jerry’s when it comes to crafting extraordinary ice cream flavors. Their whimsical, often unexpected combinations have captured the hearts (and taste buds) of dessert lovers worldwide. From the comforting embrace of Cinnamon Bun to the rich indulgence of Crème Brûlée and the playful Chunky Monkey, each pint tells a story of creative confectionery. Among these legendary creations, one stands out as a personal favorite for many: Chubby Hubby.

Decoding the Delight of Chubby Hubby Ice Cream

Ben & Jerry’s describes Chubby Hubby as “Fudge Covered Peanut Butter Filled Pretzels in Vanilla Malt Ice Cream Rippled with Fudge & Peanut Butter.” This description alone is enough to send any dessert enthusiast into a blissful trance. It’s a masterful blend of textures and tastes: the creamy sweetness of vanilla malt ice cream, the deep richness of fudge, the savory nuttiness of peanut butter, and the irresistible crunch of chocolate-covered, peanut butter-filled pretzels. It’s an experience that transcends mere ice cream; it’s a symphony of salty, sweet, creamy, and crunchy all in one spoonful. This complex yet harmonious flavor profile begged to be recreated in another beloved confectionary form.

Why Recreate Chubby Hubby as Fudge?

As much as we adore the icy perfection of Chubby Hubby ice cream, there are times when you crave that iconic flavor without the inevitable race against melting. Let’s be honest, for many of us, a pint of Ben & Jerry’s rarely makes it into a bowl once the lid is off; it’s a direct route from freezer to spoon. If you can relate to this predicament, then this Chubby Hubby Fudge recipe is your new best friend. It captures all the beloved elements of the ice cream in a dense, rich, and remarkably satisfying fudge. Imagine a dessert that delivers all the nostalgia and flavor without the need for a freezer or a race against time.

This fudge is not just a tasty treat; it’s a revelation. Each distinct flavor from the original ice cream — the sweet vanilla malt, the intense chocolate, the creamy peanut butter, and the crunchy pretzels — is beautifully showcased and perfectly balanced within this easy-to-make confection. The result is a truly impressive dessert that tastes like it took hours of intricate work, when in reality, it relies on a clever shortcut technique: combining chocolate chips with sweetened condensed milk. This method ensures a consistently smooth and delicious fudge every single time, making it accessible even for novice bakers.

The Magic Behind the Shortcut Fudge

The “secret” to this deliciousness lies in the simplicity of shortcut fudge. Forget temperamental sugar syrups and candy thermometers. Our method utilizes two main ingredients: high-quality chocolate chips and luscious sweetened condensed milk. When gently melted together, these ingredients create a silky-smooth, perfectly set fudge base that’s incredibly versatile. This shortcut allows us to focus on layering in the signature Chubby Hubby flavors rather than fussing over the foundational fudge itself. It’s a testament to how humble ingredients can transform into something truly extraordinary with minimal effort.

The convenience of this approach means you can whip up a batch of this impressive fudge for parties, potlucks, or simply to satisfy a serious sweet tooth at home. It’s a fantastic way to enjoy a gourmet-quality treat that looks as good as it tastes. Your guests will be marveling at your confectionery skills, completely unaware of the simplicity behind the magic.

Servings: 16 pieces

Ingredients

  • 1/4 cup (1/2 stick) unsalted butter
  • 1 can (14 oz.) sweetened condensed milk
  • 1 1/2 cups white chocolate chips
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/4 cup malted milk powder
  • 1/2 cup crushed chocolate covered pretzels
  • 1/4 cup creamy peanut butter
  • 16 chocolate covered pretzels, to garnish

Instructions

  1. Grease an 8×8 pan well. Set aside.
  2. Place white chocolate chips, 1/2 can sweetened condensed milk, and 2 tablespoons butter in a large microwave-safe bowl. Heat in the microwave on medium power until chips are melted, about 2-3 minutes, stirring every thirty seconds. Be very careful not to burn the mixture. Stir in the malted milk powder until fully combined. Spread this vanilla malt fudge layer evenly into the prepared pan.
  3. Sprinkle the 1/2 cup crushed chocolate-covered pretzels over the vanilla malt fudge, gently pressing them in. Allow this layer to set for about 30 minutes at room temperature or briefly in the refrigerator.
  4. In another large microwave-safe bowl, combine the semi-sweet chocolate chips, the remaining half of the sweetened condensed milk, and the remaining 2 tablespoons of butter. Heat in the microwave on medium power until the chips are melted, approximately 2-3 minutes, stirring every thirty seconds. Stir well until the chocolate fudge is smooth and glossy. Carefully spread this chocolate fudge layer on top of the slightly set white fudge layer.
  5. Dollop the creamy peanut butter over the top of the chocolate fudge. Using a knife or a skewer, swirl the peanut butter into the fudge to create an attractive marbled effect.
  6. Arrange the 16 whole chocolate-covered pretzels on top of the fudge, pressing them gently so that each piece of fudge will be topped with a pretzel once cut. Place the pan in the refrigerator for at least 1 hour, or until the fudge is completely set.
  7. Once firm, cut the fudge into 16 squares. Serve and enjoy this spectacular Ben & Jerry’s inspired treat!

Tips for Crafting the Perfect Chubby Hubby Fudge

Achieving fudge perfection is easier than you think, especially with this streamlined recipe. Here are a few tips to ensure your Chubby Hubby Fudge is absolutely irresistible:

  • Quality Ingredients Matter: While this is a “shortcut” fudge, using good quality chocolate chips (both white and semi-sweet) will make a noticeable difference in flavor and texture. High-quality sweetened condensed milk also contributes to the fudge’s creaminess.
  • Gentle Melting: When melting the chocolate chips with butter and condensed milk, it’s crucial to do so gently. The microwave is convenient, but stirring every 30 seconds and using medium power prevents scorching the chocolate. Alternatively, you can use a double boiler on the stovetop for even more controlled melting.
  • The Malted Milk Secret: Don’t skip the malted milk powder in the white chocolate layer. This is what truly gives the fudge that distinctive vanilla malt ice cream flavor, making it authentic to the Chubby Hubby experience.
  • Peanut Butter Swirl Technique: For an appealing swirl, dollop the peanut butter randomly over the top chocolate layer. Then, use a butter knife or a skewer to gently drag through the dollops, creating a marbled effect without fully mixing the peanut butter into the fudge.
  • Pretzel Placement: When crushing the pretzels for the middle layer, don’t make them too fine; you want discernible crunch. For the garnish, placing the whole pretzels before chilling ensures they adhere well to the fudge and are perfectly positioned for individual servings.
  • Patience is Key for Setting: While it’s tempting to dive in, allowing the fudge to set completely in the refrigerator is essential for firm, clean-cut squares. At least an hour is recommended, but two hours or more can ensure optimal firmness.

Serving, Storage, and Creative Variations

Once your Chubby Hubby Fudge is perfectly set and cut, it’s ready to impress! Serve it as a delightful dessert after dinner, a show-stopping addition to a dessert bar, or a thoughtful homemade gift. It pairs wonderfully with a cup of coffee or a cold glass of milk, echoing its ice cream origins.

For storage, keep the fudge in an airtight container in the refrigerator for up to two weeks. It can also be frozen for longer storage, up to three months. Simply thaw it in the refrigerator before serving. The texture holds up beautifully, making it an excellent make-ahead treat.

Feeling creative? Here are a few variations you might consider:

  • Nutty Twist: Add a layer of chopped roasted peanuts or walnuts into the fudge for an extra nutty crunch.
  • Dark Chocolate Indulgence: Substitute some of the semi-sweet chocolate chips with dark chocolate chips for a richer, more intense chocolate flavor.
  • Spice it Up: A tiny pinch of sea salt sprinkled over the top before chilling can further enhance the sweet and salty balance.
  • Different Pretzels: While chocolate-covered pretzels are ideal, you could experiment with plain pretzels or even pretzel sticks if that’s what you have on hand, then drizzle them with melted chocolate for a similar effect.

This Chubby Hubby Fudge recipe is more than just a dessert; it’s a celebration of iconic flavors and a testament to the joy of homemade treats. It brings the complexity and satisfaction of Ben & Jerry’s beloved ice cream into a convenient, irresistible form that’s perfect for sharing (or secretly indulging in!). So go ahead, give this recipe a try, and thank Ben & Jerry for the amazing flavor combination that inspired this delightful confection!
