Crafting the Easiest Ever Chocolate Strawberry Fudge!

This recipe builds on the foundation of my popular paleo & vegan Chocolate Fudge, elevating it with the juicy addition of fresh strawberries. Most of the ingredients are pantry staples, ensuring that this delightful treat is always within reach. Let’s dive into the core components that make this fudge so special and utterly effortless.

Essential Ingredients for Your Delightful Fudge

Understanding each ingredient’s role is key to mastering this fudge. Each component contributes to the unique flavor, texture, and dietary benefits, ensuring a perfect batch every time.

Coconut Oil: The Structural Backbone

Ingredients for Chocolate Strawberry Fudge laid out, including coconut oil which is crucial for the fudge's firm texture.

Coconut oil is a superstar in no-bake recipes, and it plays a critical role here. Its unique property of solidifying at cooler temperatures gives this fudge its firm, melt-in-your-mouth structure. To maintain its delightful consistency, it’s essential to store the fudge in a cool environment. If you’re not a fan of the distinct coconut flavor, or simply prefer a neutral base for your chocolate and strawberry notes, opt for refined coconut oil. This variety has undergone a process that removes the coconut aroma and taste, making it an excellent choice for a pure flavor experience.

When working with coconut oil, ensure it’s melted smoothly before combining with other ingredients. If it’s too cold, it can cause the mixture to seize. Gently melting it will ensure a uniform, creamy base for your fudge.

Cacao Powder: Antioxidant-Rich Chocolate Bliss

To achieve that rich, deep chocolate flavor, we turn to cacao powder. Cacao powder is the raw, unprocessed form of cocoa powder, meaning it retains more of its natural nutrients and is brimming with antioxidants. While cocoa powder is a perfectly acceptable substitute, using cacao offers an extra boost of nutritional benefits – a delicious way to nourish your body! To prevent any unwelcome clumps in your velvety fudge, it’s a good practice to whisk or sift your cacao powder thoroughly before incorporating it into the mixture. This ensures a smooth, consistent texture that melts beautifully.

The quality of your cacao or cocoa powder can significantly impact the final taste. A high-quality powder will provide a more intense and nuanced chocolate flavor, truly enhancing the overall experience of the fudge. Don’t be shy about investing in a good brand!

Almond Butter: Creaminess and Healthy Fats

Almond butter being stirred in a bowl, a key ingredient for the creamy texture of the Chocolate Strawberry Fudge.

Our next hero ingredient for this chocolate strawberry fudge is creamy almond butter. For baking and no-bake treats, I always recommend using a smooth, unsalted variety to ensure a balanced flavor profile. Natural almond butter tends to separate, with oils rising to the top, so remember to give it a good stir until fully emulsified before measuring. This ensures consistent texture and richness throughout your fudge. If almond butter isn’t your preference, creamy cashew butter makes a fantastic alternative, lending a similar richness and slightly milder flavor that pairs beautifully with chocolate and strawberries.

The choice of nut butter can subtly change the flavor of the fudge. Experiment with different varieties like peanut butter (for a bolder flavor) or sunflower seed butter (for a nut-free option) to find your favorite twist on this classic recipe.

Maple Syrup: The Natural Sweetener

Sweetening this delicious fudge naturally is pure maple syrup. Its delicate, earthy sweetness complements the chocolate and strawberry flavors without overpowering them. While maple syrup is my preferred choice for its balanced flavor, you can certainly use honey (though note this would make the recipe non-vegan) or agave nectar in equal amounts. However, I find that honey and agave can sometimes introduce a stronger, more distinct flavor that might overshadow the fruit and chocolate. For an extra layer of complexity, consider adding a pinch of salt and a teaspoon of vanilla extract to the fudge mixture – these optional additions truly enhance the overall taste, bringing out the best in every ingredient.

Fresh Strawberries: The Star of the Show

Crowning this delectable fudge are the star performers: fresh strawberries! The quality of your strawberries truly makes a difference here. Aim for the freshest, sweetest, and most vibrant berries you can find. While I often luck out with beautiful organic varieties from local farmer’s markets, especially during peak season, finding pristine berries in colder months can be a challenge. If fresh, high-quality strawberries are scarce, don’t despair! Raspberries or other berries can be wonderful substitutes, offering a similar burst of fruity freshness. You could even consider briefly macerating the berries in a little sugar to bring out their juices if they’re not at their peak sweetness.

Freshly diced strawberries, ready to be added as the topping for the Chocolate Strawberry Fudge.

The contrast between the creamy, rich chocolate fudge and the bright, slightly tart fresh strawberries is what makes this dessert so irresistible. Each bite offers a perfect balance of textures and flavors, mimicking the joy of biting into a chocolate-covered strawberry, but in a more decadent, chewable form.

Optional Enhancements for Extra Flair

To elevate the visual appeal and add another layer of chocolatey goodness, an optional dark chocolate drizzle can be added. This not only makes the fudge look incredibly enticing but also provides a delightful little chocolate crunch with every bite. Whether you choose to add the drizzle or skip it, you’ll still be left with a pan full of wonderfully deceptively simple, irresistibly delicious Chocolate Strawberry Fudge!

This creamy fudge melts effortlessly in your mouth, leaving behind a lingering taste of rich chocolate. The vibrant freshness of the strawberries cuts through the decadent chocolate, creating a perfect balance that prevents the fudge from being overly rich. Gather your five simple ingredients and embark on this delightful culinary journey. Whether it’s a gift for someone special or a well-deserved treat for yourself, this fudge promises pure enjoyment. Happy fudging!

Prep Time: 10 minutes
Total Time: 10 minutes
Servings: 18 pieces

Ingredients

  • ½ cup 112g coconut oil, use refined for no coconut flavor
  • ¾ cup 72g cacao powder, sift if there are lots of clumps
  • ¾ cup 192g creamy almond butter, or nut butter of choice – cashew would also work well here
  • cup 104g maple syrup, you can also use honey
  • 1 teaspoon vanilla extract, optional
  • teaspoon salt, optional
  • 1 cup diced fresh strawberries

Instructions

  • Prepare your baking pan: Line a small baking pan with foil or parchment paper. For a thicker fudge, a 9×5-inch loaf pan works wonderfully. If you prefer thinner pieces, an 8-inch square pan is a great alternative. Ensure the lining extends over the sides to create “handles” for easy removal of the chilled fudge.
  • Melt and combine: Gently melt the coconut oil in a saucepan over medium-low heat until fully liquid, or microwave for 30 seconds to a minute, ensuring it’s not too hot. Once melted, remove from heat and whisk in the almond butter, maple syrup, cacao powder, and if you’re using them, the vanilla extract and salt. Continue whisking until the mixture is completely smooth and free of any lumps. This step is crucial for the fudge’s creamy texture.
  • Assemble and chill: Pour the smooth fudge mixture into your prepared pan, spreading it out evenly with a spatula. Gently arrange the diced fresh strawberries across the top of the fudge, lightly pressing them into the surface to ensure they adhere. Transfer the pan to the refrigerator and chill for at least 2 hours, or until the fudge is completely firm. The chilling process allows the coconut oil to solidify, giving the fudge its signature texture.
  • Slice and serve: Once firm, use the parchment paper or foil handles to lift the fudge from the pan. Place it on a cutting board and, using a sharp knife, cut it into desired squares or rectangles. If you wish, melt some dark chocolate and drizzle it over the cut fudge pieces for an extra touch of decadence. Store any leftover fudge in an airtight container in the refrigerator to maintain its firmness and freshness.
