Capturing Autumn’s Essence, Even When the Sun Shines

Even in places where autumn might be a bit shy, like San Diego where lingering summer warmth often persists, there’s always a way to welcome the spirit of fall. Those precious early mornings, before the full sun takes over, offer a refreshing hint of the season – a cool breeze, a gentle chill in the air, just enough to call for a cozy sweater during my morning walks. These moments are truly cherished, serving as my personal sanctuary. They’re when I embark on long walks with my beloved Hank, savor a warm cup of mushroom coffee, engage in meditation, or attend a yoga class. Following these calming rituals, I dive into one of my most fulfilling work activities: food photography.

The Perfect Setting for a Perfect Breakfast

The soft, diffused light of cloudy mornings is ideal for capturing the beauty of food. Clouds act as natural diffusers, casting a gentle glow that enhances every detail in my photographs. Beyond the photography, these crisp, cloudy mornings are the perfect excuse to curl up with a steaming bowl of homemade pumpkin spice oatmeal. It’s my way of indulging in the seasonal mood, even if by mid-day the temperatures climb into the high 70s. This morning ritual creates a delightful illusion, letting me fully immerse myself in the autumn experience, if only for a few blissful hours.

Crafting the Ultimate Pumpkin Spice Oatmeal

One of the many beauties of oatmeal is its simplicity, and this pumpkin spice version is no exception. It’s incredibly easy to prepare, yet delivers an incredibly rich and creamy texture, thanks to the addition of pure pumpkin puree. The oats are subtly sweetened with a touch of pure maple syrup, offering a natural sweetness that complements the robust flavors of fall. A few generous shakes of pumpkin pie spice infuse the oatmeal with that iconic autumnal warmth, making every spoonful a comforting experience. The combination of these wholesome ingredients not only creates a delicious breakfast but also provides sustained energy to power you through your morning.

Why Choose Oats for Your Fall Breakfast?

Oatmeal is renowned for its health benefits, making it an excellent foundation for a nutritious breakfast. Rolled oats are packed with soluble fiber, which is known to aid digestion, help regulate blood sugar levels, and contribute to heart health. They provide a slow-release of energy, keeping you feeling full and satisfied for longer, preventing those mid-morning energy crashes. For those following a gluten-free diet, ensuring you use certified gluten-free rolled oats means you can enjoy this comforting dish without worry. Paired with the seasonal goodness of pumpkin and apples, this oatmeal becomes a powerhouse of flavor and nutrition.

The Art of the Sauteed Apple Topping

While your pumpkin spice oats gently simmer on the stove, absorbing the creamy dairy-free milk and transforming into a thick, luxurious base, you’ll simultaneously prepare the star topping: perfectly sauteed apples. This step elevates the dish from a simple bowl of oatmeal to an extraordinary culinary experience. In a small pan, a touch of coconut oil and a hint of maple syrup create the perfect environment for the diced apples to soften and caramelize. As they cook, their natural sweetness intensifies, and their texture becomes wonderfully tender with a slight bite. A sprinkle of pumpkin pie spice joins the apples in the pan, ensuring every piece is infused with warm, autumnal flavors. Finally, a handful of chopped pecans are tossed in, adding a delightful crunch and nutty depth that perfectly balances the soft apples and creamy oatmeal.

Serving Suggestions and Customizations

Once both components are ready, generously pile the warm, caramelized sauteed apples on top of your steaming bowl of pumpkin spice oatmeal. The visual appeal alone is enough to make your mouth water! Serve it just as it is, or add a final flourish to truly make it your own. A drizzle of your favorite nut butter, especially pecan butter, creates an extra layer of richness and flavor, complementing the pecans in the topping. Almond butter or cashew butter would also be excellent choices. You could also sprinkle a few extra pumpkin seeds for added texture, or a dusting of cinnamon for an aromatic finish. Grab your favorite mug of coffee or tea, find a cozy spot on the couch, and savor every spoonful. You truly deserve this moment of warmth and indulgence. Happy Fall, my friends!

Total Time: 15 mins
Servings: 1 serving

Ingredients

For the oatmeal

  • ¼ cup pure pumpkin puree
  • ⅓ cup gluten-free rolled oats
  • ⅔ cup dairy-free milk, I used almond milk
  • 2 tablespoons pure maple syrup, or to taste
  • ½ teaspoon pumpkin pie spice

For the sauteed apples

  • ½ teaspoon coconut oil
  • 1 teaspoon pure maple syrup
  • ½ of an apple, diced
  • ¼ teaspoon pumpkin pie spice
  • 2 tablespoons chopped pecans

Instructions

  1. In a small saucepan, combine the pumpkin puree, rolled oats, almond milk, maple syrup, and pumpkin pie spice. Simmer until milk has absorbed into the oats, about 5-8 minutes, stirring occasionally.
  2. While the oats simmer, heat a small saute pan and melt the coconut oil. Add the diced apple pieces, maple syrup, and cinnamon. Saute until slightly softened, about 5 minutes. Toss in the chopped pecans.
  3. Place the oatmeal into a bowl and top with sauteed apples and if desired, a drizzle of nut butter (pecan butter is a great choice here). Enjoy immediately!
